SASHIMI: Use the Iyakame process. Scale the fish skin. Remove the head and clean. Cut the tail and fillet the fish. Cut the fillet in sashimi bites. On a plate, add shredded radish, perilla leaves, flatfish sashimi, wasabi, grape seaweed, lemon cut, red seaweed, shredded carrot and cucumber. Garnish with daisy petals.
HIRAME ABURI NIGIRI: shape rice into small pieces, place sashimi on top of rice, torch and plate.

  • Flounder (flat fish) sushi trivia 1. If the underside of the fish skin is white then it is wild caught, otherwise it is farmed. Depending on seasons wild caught flounder tastes better than farmed. You don't have that problem with farmed fish. It all depends on the fat in the fish. 2. Flounder meat taste very bland(like rubber) and chewy when cut alive. So, sashimi cuts would need to be thinner. 3. When flounder meat goes an aging process, meat develops flavor and softens. Then, sashimi cuts can be thicker and perfect for sushi. 4. Too much aging would start breaking the structure of the flesh. Too little aging would not develop flavor. 5, If a sushi chef makes a sushi with unaged flounder then you can skip that restaurant for good. But it's okay with sashimi. 6. There are cultures, like S.Korea who likes unaged live cuts specifically for the chewy taste with added chilly sauce but that isn't sushi.

  • Japan takes long time preparation because fish is to be eaten uncooked. They're making sure food is clean and safe for consumption. While the other one is quickly prepared because it has to be cooked to make sure food is also safe for consumption. I think both chefs are great. Salute!

    • That is partially true, the flounder looking fish is very sought for, even though it's meat is thin, it is white, flaky and naturally sweet, and normally people don't pick the biggest one. More like a medium small one so they can fry it whole and it's just a giant fish cracker. If you eat these fish, it must be just out the water. Asians don't agree on the word "fresh" if it's otherwise.

  • Even I’m Vietnamese living in Japan now I have to agree with Sony that Japanese’s sushi is better than that Vietnamese’s dish . That Vietnamese food is also my favorite too . Sushi is really elegant . Preparation require high quality knife skill .

    • @@vule5617 but It changed to one of most expensive dish in the world. If you research “honmaguro otoro “ it may cost you 5-10 dollar just for one small piece. The sushi make from blue fin tuna , or dining at the average quality sushi restaurant could cost you 200$ at least

  • I love these chefs. The Japanese chef is so skilled and professional but has the same look on his face as a teenage girl tired of hanging out with her mom. Meanwhile, the Vietnamese chef is obviously forged in the fire of the dinner rush with practiced hands but the look on his face is that of a teenage girl who just found out she has to move to a new school.
