🐙 BOILED OCTOPUS WITH POTATO FOAM: Potato foam: Boil potato in the octopus water. Blend boiled potato with cooking oil, garlic, Spanish paprika and wine. Grain the mixture. Pump potato foam in a bowl, add boiled octopus slices, fried garlic, coriander and green onion oil.
🐙 SMOKED OCTOPUS: Pan-fry the tentacle in wagyu fat. Slice it up. Plate with fermented strawberries and wagyu jus.
🐙 BRAISED OCTOPUS: Braise raisins soaked in sherry vinegar, paprika, cashew nuts in the base made from shallot, garlic and flour together. Add octopus flesh. Stir and plate with spinach, tomato jam, pesto, lime aioli and brown rice.
