🐟TRADITIONAL BRAISED COBIA: Clean the Cobia and cut the fish into large steaks. Braise the fish for 20 minutes in a broth made with minced garlic, fish sauce, sugar, MSG and cooking oil. Add fresh chillies and ground pepper. Serve with steamed rice.
🐟COBIA HOTPOT: Make the broth with shrimp satay (chilli sauce), secret spicy seasonings, sugar, salt, MSG and lemongrass. Serve with cobia head, inner organs, eggs, gills. Add onion slices on top and serve with vermicelli and vegetables.

🐟AMUSE-BOUCHE: Steam the fish for 15 minutes at a rising temperature up to 100 Celsius. Mince the shiitake and hedgehog mushrooms. Season with salt. Add mushrooms in a bowl with tofu and mix. Add the cobia fillet to the mixture.. Season with Vietnamese Sichuan pepper and prickly ash. Shape them in balls, and put it in a blast chiller at -18 Celsius. Dip the balls in fry powder, egg and green young rice. Deep fry for 15 minutes and serve with Vietnamese Sichuan pepper mayonnaise.
🐟STARTER: In a pan with butter, saute bits of cobia meat. Prepare the pumpkin puree (cooked for 3 hours) and crustacean jus - Crab, lobster, shellfish stock (cooked for 4 hours). Start plating crustacean jus, pumpkin puree, dried ants, cobia meat, roasted cacao nibs and thyme.
🐟SOUP: Prepare the broth using mushrooms, purple onions, lemongrass, ginger, dried shiitake mushrooms, turmeric, garlic, coriander, chillies in a pot. Sear the ingredients and then add water, black pepper, coriander seed and star anise. Repeat the process and then filter the broth. Add soy sauce and vinegar to the broth and leave overnight. Pan sear the cubed fish meat and flambe with Vermouth. Pan sear the hedgehog mushroom with butter. Start plating by adding the fish on the plate, mushroom, fermented black trumpet mushroom, and serve with mushroom broth.
🐟MAIN: Season the cobia with salt and oil then grill it on charcoal for 8 to 10 minutes. Dice the zucchini. Put the fish on the lard to melt. Sautee the zucchini with salt and pepper. Prepare the emulsion. Plate and serve.

    • Glutinous young rice (cốm) is a (seasonal) traditional ingredient in northern Vietnamese cuisine. It's quite delicious to eat raw, actually, before the rice hardens. But people do use them in a few dishes such as chả cốm, bánh cốm, etc.

  • I love how Sonny, up the "food review" game on KZhead. He started as a "usual food reviewer/adventurer" or whatever you called it, where he visited streetfood, restaurants, foodstalls, you-name-it, and gave comments about it. Now, he opened our mind that there are more "food programs" that he can offer. I know that some of the content format/structure may "copy" from other youtubers, (like BuzzFeed's Worth It), but he did not clam it to be original, and the way he delivered it gives it a different touch. So, kudos to Sonny and every single member of BEFRS! Stay safe, Healthy, and creative! I hope the situation gets better soon so that you guys can visit more cities, and more countries!

  • For french chef, he said "like there is no fish". but when he asked did u pour hot water to remove scales, he said, no to keep original flavor" See finally his dishes may taste good, but dominated by other things like 3 points he said, ants, mushrooms, pumpkin. He never spoke about taste of fish. Subliminally he is giving true verdict, even though he is praising french guy.

    • @@taotzu1339 French chefs tend to be full of themselves (not saying they all are, but it's common). The French firmly believe their food is the best in the world, and I think they feel challenged by various Asian cuisines.

  • Cobia is probably my favorite fish to eat. We catch them in the Chesapeake Bay by sight casting with eels or jigs, One of my best friends is a Cobia specialist and Charter Captain. Its great as sashimi o r cooked. I either grill it or do a piccata with it. Also, lemon and capers or are a great combo.

  • the french methods are very impressive have to say. it makes me craving for it. it's very different from the other method but certain things i love from the Asian ways to cook fish are missing from the western way to treat fish. i don't quite like this specific Vietnamese way to cook it but there are plenty of other ways to cook fish in Asia and i absolutely love em.

  • What a smart move at end by not making comparison. Vietnamese foods are what you would probably called " working class" foods. Fast prep and no waste. Other one is a world class restaurant but it still comes down to ones root when it comes to taste. You are likely grown up in same enviroment and are likely to lean towards whats most familiar to you when it comes to taste.
