I just found your channel. Your project is very interesting to me, since my old house restoration project involves brick and limestone from the mid 1800s. That's true, that was very well built with run of the mills materials, nothing fancy, nothing quarried, just some stones.And it's all pretty much standing strong. Only issues are where later people decided to make changes.

Interesting. How old is this cellar? Where is it in France?
Age of the cellar is quite difficult to establish, it predates the house which was built around the 17th century. And the weird dug out in the geological rock layer, that don't align with the current layout, may implies that it was something else before. It's in the middle of France in Limoges.
