My day job is at a construction company that maintains a set of artificial caves, that have been turned into warehouses. I’d try to close off the secondary cellar, with a weatherproof door, pumping condensation into the “sewer “ in that section. Plexiglass cover over the undercellar? Either way, excellent job, looking forward to the progress.

And now that all the dirt is gone....you realize you need more dirt lol You have a lot of unique water/humidity issues in that place, I'm interested to see how it goes. I think you definitely need some type of forced ventilation, more than the present setup.
fantastic! the place is HUGE. hope you find the water's source (groundwater???) and are able to control it...
Best is to dig a deep hole, so you can see the water level moving
