Pickled Watermelon Rind! (Sweet, Spicy, and Crunchy)
Cut the end caps off a small watermelon then stand it up on end.
Cut slices straight down about 2 inches wide. Remove the red watermelon from each slice leaving a 1/8 inch of red on the rind.
Take a potato peeler and cut off all the outer green skin.
Cut the strips in to 1/2 inch cubes and put them in a sterilized
quart or pint jars leaving a good inch head space at the top.
Make the brine below....
Brine:
1 cup of water
1 & 1/2 cups of (white) or (apple cider) vinegar
1 & 1/2 cups of white sugar (maybe 2 cups)
1 tsp. whole black peppercorns
1/2 tsp. red pepper flakes
3 tbsp. Kosher salt
(You can also add 2 tsp. coriander seeds) (I forgot)
(Apple Cider Vinegar has a bit more bite and the white vinegar
is a bit smoother... especially when you use 2 cups of sugar.)
Mix and bring to a boil and simmer for one minute...
Remove from the heat and let cool for a couple minutes
then add 1 cup of ice cubes and stir until they are gone.
I only used 1 cup of water at the top of the recipe because
this one cup of ice will melt down to 1/2 water and help cool
the brine to warm.
Pour the still very warm (not hot) brine over the cubed rind
and twist the lids on pretty snug.
Now turn the jars upside down and store in the refrigerator for
1 to 4 days.... how ever long you can stand it... but they are really good starting the next day.
Keep them in the refrigerator but... because of the salt and vinegar
they will last 3 or 4 weeks easy! (They will be gone before that!)
Enjoy!
P.S. I just made a new batch with 1 & 1/4 cup white vinegar
and only 1/4 cup of apple cider vinegar, 2 cups of sugar and
1 tbsp. of good old pickling spice. It was really good as well.
Not quite the bite of all apple cider vinegar ... try them both!

  • 🍉I grew up eating pickled watermelon rind. We made it with boiled sugar water, touch vinegar, whole cloves, allspice berries and cinnamon sticks. Then we processed the jars. They were ready when the rinds were translucent and had a green cast to them. We also scraped all the red off. We either ate them right out of the jar or with cheddar cheese and crackers. 😋😋😋

  • I made this and it's fantastic! So you can quickly figure out if you have all the ingredients for the brine, they are: 1-1/2 cups (each) of water, apple cider vinegar, and sugar; 1/2 teaspoon red pepper flakes, 1 teaspoon black peppercorns, and 3 tablespoons Kosher salt. These measurements gave me exactly enough brine for 2 quarts with about half an inch of headspace. I'm planning a "picnic for 2" for the 4th of July and we will very much enjoy these watermelon pickles. Much love and honor to the memory of Mr. Shotgun Red!

  • Greetings from Hungary! I love pickled grinds, The way we do it here, is to boil salted water, (1 liter - 1 tbs salt), cool it down. Put fresh dill, 2 cloves of garlic, couple of black peppercorns and some mustard seeds in the jar, put the cleaned grinds in (I usually leave them in long stripes, resembling cucumber stripes) and leave them in a cool, dark place to ferment (usually 2-3 days). You have to let the gases out from time to time by unscrewing the top, maybe once a day. Then it goes to the fridge, lasts for about 2 weeks, unless it's consumed earlier! :-) I will definitely try this version, too. Thank you!

  • I picked up a baby watermelon yesterday. Cut it up and made a batch up last night. Just rewatched the video this morning and couldn't resist. Opened the cute Miss Shelia sized jar : ] this recipe was easy pleasy and came out really good. The jar sealed. They were crunchy and the taste is superb...the rest will be ready for the 4th and I can hardly wait. Thanks to all at Cooking with Shotgun Red and I hope you girls keep this page going. RIP Steve

  • Thank you for this. I plan to a batch in honor of my grandma who died on this day years ago when I was 19. It's on of the things I couldn't wait to dig into when visiting grandma, along with her cucumber pickles. It always seemed to surprise her that my two brothers and I would eat so meany in one sitting!! She was overcome by cancer way too young in her late 50's. I didn't get a chance to get her recipes before she passed on, so this helps me to relive the good times and help me reconnect with her. God bless you and your family.

    • Oh yes pickled watermelon rind was pretty common in older generations,along with tomato preserves,cantaloupe preserves,pickled peaches,course pickled pigs feet,eggs,& most all other vegetables or fruits.

  • What a lovely guy. A real gem. I had never watched a cooking session in my life by anyone, and by chance, in looking for something else, I came across this video. Suffice it to say that I found Steve's personality to be unbelievably endearing. He was absolutely hilarious and super friendly and explained everything so clearly. I'm not a cook by any stretch of the imagination, but I WILL be following his recipe for pickled watermelon as soon as I buy my next watermelon. As for his passing, which I found out by reading the comments below, it really touched me, despite having just "met" him 30 minutes earlier. What an injustice. A wonderful human being like that, who gave so much pleasure to all around him, to die way too early in life, when there are so many evil people in this world who live to a ripe old age, and do nothing but make other people's lives miserable, and revel in it.
