  • True story - I was at a late summer potluck and noticed the abundance of children and the plate of sliced watermelon. I also knew these children's eating habits - so I asked the hostess if she minded if I cut the fruit off the rind. She knew I had just heard about watermelon rind pickles and was itching to try some. She laughed and told me I was 'really hardcore', but that's a compliment coming from her :) We both hate waste! And the pickles were delicious - a friend called them 'Christmas in a jar"!

  • THANK YOU I lost my recipe for these so I will try yours but will use fresh ginger in mine. I love pickled ginger and think it will work with the watermelon. LOVE YOUR VIDEOS.

  • I made these about 30 yrs ago and my family fell in love with them. My plan is to make some this year and surprise my kids for Christmas with a few jars.

  • Well Kim you really struck a chord on the strings of my heart with this pickle! I remember being small fry and my Mom sharing these with me. They were not homemade just the old south brand from Bettendorfs grocery store. All in all, I just made a batch and they looked like yours. I went shy with the cloves but added 1/8 tsp. corriander and good pinch red pepper flakes. Thanks so much ;-)

    • Mine did too until they started having kids and found out how little things get expensive fast. They are not as over the top as I am about no waste but I see improvements all the time.

  • Best video I’ve seen yet I have to hot can watermelon rinds at work and this video helped a lot!! We use cinnamon allspice and cloves and every 3 batches a Arbol Chile.

  • You can add ice for soaking if your bucket or pot doesn’t fit in the fridge. Ice and water .

  • Pampered Chef has silicone oven mitts that can also be used to retrieve items from extremely hot to boiling water they are awesome for canning use... I can’t remember the exact temperature for water but it’s high considering I can retrieve a cast iron cornbread skillet out of 550 oven temp...

    • Despite the sugar, they are 5 carbs per 1/4 cup so I can still enjoy them.

    • I started yesterday , it was in the brine in the frig. 12 hours. I only got 3 points. So that means I need to eat more melon! So beautiful. Used one tsp clove and 2 cinnamon stix in a spice bag.

  • I've been looking at recipes and came across your video. I'm making some watermelon pickles tonight, but my comment is about your peeler. I just bought the Milk Street Precision peeler because my mom has problems with her hands. It peels veggies and fruit like butter! This peeler is amazing. Just FYI. Thanks for the recipe.

  • can you use any pickle recipe for the rind? we dont care for sweet pickles, but we do love kosher or dill or garlicy with a mild heat .. so wondering how the rind would do that way .. guess i am gonna have to find out lol

  • The skin is dense in nutrition hun. It’s good sliced into strips then simmered till aldenté in olive or castor oil. It’s quite hard so it simmers for a while. I tried it in garlic and sweet onion with a few herbs and had it as a side dish to pasta. It was great! It’s so nutrition dense you get full fast on a small amount.

    • @@LifePrepared No problem. Enjoy! 💚Oh… I made them very thin strips… about 1/8 on an inch. It’s nice to put in some thicker strips of rind too but let the skin simmer for a while first and then the liquid in the rind sort of re-simmers it a bit longer. It needs to be a low-ish heat because the rind tries to caramelize. Also if you boil/simmer the skin for a while then put it through a blender you get a good health drink. ;) Thank you for your recipe and method. 😁

    • @@LifePrepared By the way - did you know you can sprout the seeds so they have even more nutrition than when unsprouted? Cut down the light green lines only as they’re a marker for where to find the lines of seeds - then pop them off the cut wedges. Rinse then cure the seeds in a paper envelope for a couple of days or until you want to eat or sprout them. That’s assuming it’s not one of those awkward “seedless” watermelons. lol

  • What are you doing? You are only suppose to put sugar water red vinegar pickling spice and watermelon rinds. That's how you make them. Try it.
