It's a seafood forward restaurant told through the lens of a lot of Ethiopian recipes where I could cook my food from my culture. It's a huge source of pride for me.”

I had the sincere pleasure of working with Chef Marcus Samuelsson at the Minneapolis location of Aquavit (closed 20 years ago) His nurturing management style was instrumental in making me the chef I am today. I can clearly see his style, influence, techniques and family style teambuilding in the eyes of the incredibly talented Chef Fariyal.
That is cool to hear. All we hear is how toxic culinary world can be. It is nice to be reminded that there are people in the business who are doing it right.

Absolutely love her personality, and how much she actively helps others out. You can tell that she's a good boss, everyone seems on the same wavelength and like they're happy to be there doing what they do.
She grazed on over the “she sees me on tv so now she can brag about me” bit, but as an immigrant as well I felt that in my SPIRIT.
Also the environment in her kitchen seems so familial. I love it. (I know that’ll go out the window once the night starts lol)

As a Swedish Ethiopian mulatto myself, I really appreciate this video. Marcus Samuelsson is kind of a patron saint of Ethiopians in Sweden, and it really warms my heart to see the influences being carried over by him and Chef Fariyal. Much respect to Bon Appetite for representing one of the smaller, but more unique cuisines out there

Chef Fariyal was amazing! The breakdown of stations, roles, logisitics, cost managment, diversity in teams, uniform and morale, and joyful communication with each of the staff members was refreshing. It reminded me a little of my time working at Disney before returning back to New Orleans, but even more natural. She definitely could have her own show, personality, look and insight of DEI leadership in high end culinary in major cities; I loved it! Every aspiring restaurant should look at this video for training on workflow. Great job Bon Appetit!

This is why America is one of the Best Food Countries in the World, because they allow other countries & cultures to express themselves onto a plate. The flavors of Ethiopia & other parts of Africa with a Modern American Seafood setting, you can’t help but to be inspired by that.

I like her she seems down to earth and personable. A lot of chefs on these shows seem overly focused and professional (which is not bad at all!) just nice to see an executive chef who talks to the camera like shes talking to a close friend.

This was interesting. I always wondered what an executive chef did. Other things I noticed, love the diversity of NYC. The working atmosphere was friendly, focused and fun and she’s a natural in front of the camera and beautiful!
The most important this in this video to me was her going over the labor costs with the cfo on a weekly basis. Not mastering the business aspects is why most small restaurants fail.
I love when young passionate chefs bring positive energy into the kitchen. Hav & Mar will definitely be on the top of my list when I visit NY again!

It's nice that you experimented with a little Haitian cuisine as well. Djon Djon is primarily used for our infamous Haitian black rice. Marcus also has an amazing restaurant in Newark, NJ called Marcus BP. I'm pretty certain Hav & Mar is just as amazing. I can't wait to check it out!

Just by scanning the menu I can tell there is also a lot of southern US influence in the menu. A lot of cornbread, grits and collards involved. It reminds me of his other restaurant Red Rooster in Harlem, but more seafood forward and more Ethiopian flavors
