Homemade KEFIR BREAD - Gut Friendly

Enjoy this gut friendly bread recipe:
2.5 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon unrefined salt
1/3 teaspoon baking soda
1 3/4 cups kefir
Preheat oven to 400F.
To a large bowl, add the flour, baking powder and soda, salt, and mix well. Add half of the kefir and mix well, and the other half and mix until well incorporated, without over-mixing. Let the dough rest at room temperature for 20 minutes.
Line a loaf tin with parchment paper, carefully pour in the dough, top with a pinch more salt, and bake in the oven for 30 minutes, or until the internal temperature is 198F.
Allow bread to rest 5 minutes, then remove from pan and let rest another 20 minutes on a wire rack. Slice and enjoy!

  • Gut friendly is misunderstood here. Kefir is gut friendly in the bottle, not when it is subject to high heat in the oven or top of stove. Heat kills the bacteria.

    • It will die but not before helping to breakdown the nutrients in the flour and helping to better digest and make the nutrients more accessible to your micro biome. Think in terms of true sourdough without the work of sourdough.

  • Key issue IMO is the flour!! Sure, it’s a complex form of carb but is still carb. I would even replace this carb with gluten free organic Sorgum/Millet flour which is also complex carb and arguably more gut-friendly. At the end of the day, carb is carb so watch how many slices you eat. Bobby should have mentioned how many grams of carb is in that slice. Also, the kefir as an ingredient is a total farce. You are better off drinking it by itself without exposing it to heat. Bottom line is just avoid the carb, or if you must eat bread, don’t make a habit out of it and even then don’t exceed 8-10 grams of carb which likely amounts to half a slice

    • I drink, bake and cook with my kefir almost daily, as I use it in place of milk. It is only expensive if you buy it the store. Since I make mine, I have an over abundance. And the probiotics are killed by cooking , but it still has many more benefits than eating homemade white bread. Kefir is a ferment that will help ferment the flour, not as well as a straight sourdough ferment, but it works the same just to a lesser degree. Research what fermenting flour does for digestibility of flour and then maybe you will not be so harsh in your response.

    • Not low carb, but way better carb wise than traditional bread. Even with fermenting it is still over 50 carbs per slice, but if you are not eating it daily it is still way better for you then regular junk sold in stores.

  • Doesn’t all purpose flour spike your insulin just like how he is always tell viewers to avoid most of the sugar? I see no point to use such an expensive good quality kefir in baking. Kefir or yogurt just helps to soften the texture and keep baked goods moist. Nonetheless, I appreciate the simple ingredients which is much better than the store bought unhealthy version that loaded with refined sugar.
