  • Anyone curious about the strange looking webby stuff around the patties that is called caul fat. It's the fat that lines around the stomach of cattle sheep, pig, and goat. Caul fat is usually paired with leaner meats to lock in moisture to prevent dryness and add some flavor.

    • And generous with the sauce too, they understand it's not just for show. I've seen some terrible things about how burgers are done in the U.S, why would anyone only want a hint of a sauce on one bite of the burger? That got all flavor soaked out in a steamer already.

    • Cooks in the army can all do it. I cooked in a youth camp for 200 kids. and when I tried I could do it on the same day, After you mix the eggs, all shells fall into the bottom of the ball and you can just pour the egg off them.

  • This looks great. I would love to try these burgers. The only thing i can say is that the eggs are overcooked. Eggs should be pulled off as soon as they are solid or when the yolk is solid based on preference.

  • In my experience, using a dowel to salvage a wallowed screw hole is only good for light work like escutcheon plates. If a screw needs to be really sucked down, its threads will cut the long fibers of the repair dowel and pull them out. A longer screw, dimensions permitting, works the best, with various fillers coming in next. Also, a plug with its grain running the same as that of the workpiece works well. PS - That's a great video of Old Glory you made!

  • 1:25 Years ago I spent more than a year trying to find this fat in LA to no avail. It's really hard to find this fat in a quantity that is both pristine and tasty (not a byproduct). Kudos to you dudes for finding this sweet stuff. I wish I could enjoy one of your burgers. That angelic lacing you envelop it with is going to make it so utterly delightful.

    • Sign says “fukuchan ramen” and number begins 863 - quick google search hits Fukuchan Ramen Taguma Honten in Fukuoka - Fukuoka isn’t really convenient to get to from most places in Japan (super far south), but you should be able to find similar (perhaps even better) tonkotsu ramen places throughout Japan
