A bakery that lives in harmony with nature.
Almost no electricity is used, and the bread dough is hand-kneaded and allowed to ferment naturally.
And the bread is baked in a homemade wood-fired oven.
Koki Ota, a baker, travels to France to learn the way of life of a "Paysin Boulanger" (a farmer's bakery).
He returned to Japan and now runs a one-of-a-kind bakery with his wife in an old folk house deep in the mountains.

  • As a son of a baker myself, I could not help but admire the way the bread is made in Japan, with a lot of care, love and passion. I am in my mid 60s but I helped my father from the age of 7 and loved every minute of it…….money is not everything……bravo….❤❤❤❤

    • I speak French, and as such, I was in Kyoto this past summer, where I ran into a French guy who had been living there for the last 20 years. I got the goods right from the horse's mouth; according to him, in the last 4-5 years, a great many French bakers have moved to Japan, and they have spread their art. In his own words, the bread in Japan, is every bit as good as that in France.

  • Какой благородный труд! Сам мукомол, сам дровосек, сам истопник, сам тестомес, сам пекарь, сам уборщик и ещё и продавец периодически. А как отработан весь процесс, ни одного лишнего движения, никакой суеты. Все примитивно, но это и ценно. В этом хлебе душа есть!

  • I'm french and a former baker, and this man is working exactly like we did in the old days in France and like I did from 1990 to 2020, except that he's Japanese! Thank you guy for your video, I know very well the patience you have... You don't work the dough much and your ingredients are really looking good, which both are the best way to have a good bread. I would have loved to taste it!

    • @@heliedecastanet1882 Could very well be. I watched again and it appears the reason that loaf has the unusual look is in the shaping. He puts the dough seam side down in the proofing basket then when he turns it out he doesn't score it. Wish I could taste it!

    • На каждый товар есть купец , я бы с удовольствием поела такой хлеб и не было бы жалко денег , так как видно какой это труд вам продают не просто хлеб из муки купленной в магазине , не понятно как эта мука еще сделана , а муку делают сами на закваске , вы когда нибудь ели такой хлеб ? За один аромат такого хлеба я готова заплатить эти деньги . Я ела такой хлеб , рядом с нашим домом сеют пшеницу и мама покупает зерно и сама перемалывает в муку . Стоит такой аромат ❤ это и есть жизнь .

  • I am fascinated by what I have just seen. I grew up in Europe and was practically raised on rye bread which I still love, in my old age. Now I live North America and when I see this master baker Koki Ota how lovingly he makes and creates his bread, I am filled with feelings like amazement, envy and sadness at the same time. I am amazed by this baker's lovingly made products, envying local people who have access to this baker's products and I am really sad that I am not one of those people. Master Koki Ota (and I mean Master), although we never met and most likely never will meet, you have my respect and I wish you many years of success.

  • I absolutely LOVE that Joel said “we need to not get ahead of them (newbies) and instead hold the their hand” it is extremely isolating, and jarring when you make the change to this lifestyle. When you have fellow homesteaders that aren’t welcoming it causes a lot of self doubt and heartache.

    • @@hilmir We are a focused, reserved culture, so what you might perceive as grumpy can be an individual raised in a different culture, who doesn't outwardly appear chatty and smiley, as an American or western European might.     • @@hilmir He and his wife run the bakery. They manage every aspect, as is shown. He and his wife are shown selling the bread at the bakery and elsewhere. He trained in France and looks to me like he is a very contented and focused young man. He and his wife both look happy to me; lovely smiles when they interact with their local customers. How wonderful their success at such a young age. What a beautiful location for this 'farmer's bakery'. Their website is beautiful. Wonderful video! May they enjoy many, many years of continued success.

  • Very emotional memories for me to watch, in the 1960s England My late farther made breads exactly the same way, all hand made, no machines and a coal oven, fantastic to see, bread looks amayzing, i only wish i could try it. Please keep up this great tradition and skill. ❤❤❤

  • Such dedication. He obviously has been doing this since he was a child, and enjoys the quiet and solitude. His bread baking is true art. Where I live, we have a small baker's shop where he does the same type of bread, in a wood fired oven, etc. He's only open one day a week for 4 hours. There is no bread made anywhere that tastes better than bread in a wood fired oven. What a joy to watch this man do his craft. I just wish I could enjoy some!!

    • He uses French methods, even materials such as the canvas where he places the loaves and how he weighs them, using fabric covered baskets to mold them, etc. It's exactly how we do it in France traditionally.

    • No way, Japan is not a country of Bread. Until 20-30 years ago there was no bread of this kind in Japan!! We had till then only white bread made by mostly big factories and there was no bakery at all and we Japanese only seldom ate bread. Now it seems to be a fashion to eat bread in Japan!! Eating bread became a fashion promoted by the media and Japanese love fashionable things!! I am Japanese living in Gernamy for more than 45 years, but I prefer eating rice.

  • Greetings from Taiwan. The skills of this baker are incredible. To do this all by hand with nearly no electricity is amazing. I love how he effortlessly spoke to his neighbor in French. I travel to Japan often and hope to visit this beautiful bakery in the mountains.

  • Total admiration and respect for the craft of this baker. People who live close by are blessed. There is no time lapse but to make this kind of bread requires more then 24 hours, probably 36 or even 48 hours. If the cost of the bread is less then €10 it is cheap. I myself make this kind of bread from time to time but after watching this video I will not mention it to nobody anymore. Watching this video was hypnotic experience! God bless you!

    • Traditionell gebackenes Brot - lecker! Da es beim Deutschen Bäcker hier nur noch Industrie-Brot gibt, backe ich seit Jahren mein Brot selbst, mit natürlichem Sauerteig und langer Teigführung (>24 Stunden). Roggen, Weizen, Dinkel, sowie Saaten nach Belieben. Auch dem Nachbarn, der kein Industrie-Brot verträgt, hatte damit keine Probleme. Respekt vor dem japanischen Bäcker. Das ist mächtig viel Arbeit, die er leistet. 💪

  • It is quite amazing to see that this baker was able to keep working in a traditional manner outside of a densely populated area. This manual workmanship is very important to keep the tradition alive. I live in a medium sized village (10000 people) on the border of an industrial/commercial hub in NRW/Germany. The continuous degradation of our local small businesses over the last 30 years has left me sad and worrying for the things to come. There is almost no small business left but i can get to 3 different supermarkets on foot or by bike. Sadly all of the 'real' bakers in our village have closed shop since they could not get the personal for selling the bread wares in their own store or getting apprentices for the baking work itself. Supermarket bakeries are supplied by industrial companies and just 'heat up'/brown the baking wares in the electric ovens in place. The quality is not bad but getting a fresh loaf of whole wheat or rye bread is getting harder. There are some bakeries still left in the greater area around but i have to use the car to get there. The only positive development so far is that one of the supermarkets has begun to actively market and sell local produce.

    • yeah but we have Backwerk lmao i hate to admit it, but their Geflügelrolle got me through some tough times trying to learn German in Cologne. I now live near a small ancient village called Stadt Bankenberg and when I moved here I was shocked they don't even have a convenience store/corner shop or a post office let alone a bakery. its really sad I agree!

  • As an artisan baker I can say this guy is the real thing. I really like how he bakes them till the loaves are properly colored. Lots of baker pull their bread out to early. The crust needs full development of its flavor and that means it has to be well browned. Excellent!!! Ahhh!! The smell.

    • A lot of them too well done for me. There's a big difference (and probably only a very short difference in cooking time) between well browned and burnt, which a good number of them were. But perhaps that is the cultural norm and preferred/accepted that way. They certainly look better than much of the 'bread' sold in the Tokyo supermarkets which is in a pack of one or two slices, each about an inch thick.

  • I like the way he doesn't compromise by making the kinds of breads (curry, sausage rolls, etc.) that seem to be expected of most Japanese bakeries. He's sticking to authenticity in the type of bread he WANTS to make, and apparently has gained a robust following as a result. (Kyotango in Kyoto Prefecture is known for its wealth of independent artisans and craftspeople, so I guess this makes sense.)

    • @@haohan1847 the bread he makes is not just bread , cause of using sourdough it is high on minerals, vitamins and antioxidants , we don't have in other bread. And it increases the bloodsugar much slower so it's better for diabetic people also it satisfies hunger longer

    • since he is a one man show, i dont think he can afford to make fancy breads even he wanted to. his operation is already very lean and you can see it takes him a whole day to do it. a helper has to service the selling and delivery. i dont think it is about compromise at all.

  • What a delightful time I had watching this. I was a baker myself, it was during a break in my career, wanted to do something different, and ended up doing the training and started a job as an overnight baker. Just seeing myself involved in the process from the ingredients to seeing your product being sold, it's been so far one of the most fulfilling experiences I had in my life.

    • I've spent the last few years teaching myself how to bake bread. As a professional, can you explain to me why he's firing the loafs so hard? And the way he's kneading the dough into itself caked on with flour surely shows that in the layers, I've done this myself countless times. Am I missing something?

    • Watching this young man, 1st blessing his bread before he started and then watching him doing everything by hand, transported me back in time 30 years when I was just learning on the job in a standard small restaurant, baking through the night. I would have loved to experience the joy of making traditional wood fired bread with this gentle young man 🙏 😇 ❤️ 💙 💜 💖 💗 💘 ❤️ Thanks for sharing this beautifully made video with the world.
