I'm confident he fucked it up by making too deep of cuts when he scored it. I only know this because I saw a Future Canoe video where he tried th same criss-cross scoring pattern on a pork belly, and said the crust ended up being too hard, describing it like hard candy. Notice this guy suggests using a thicker cut because his seems over cooked. I think it might have been fine if he just did shallower cuts when scoring it.

Been doing that for 3 decades, mate. You only need to cut 3/32"-1/8"/ 2-3 mm deep. Just lightly score the surface. Works equally well on the charcoal grill too. I also use a fork to break up and emascerate the fatty veins running through certain cuts like a ribeye. It allows the fat to render down and cook becoming a flavor packed crispy crust itself. Its a great system. Try it!

A layer of fibrous matter that intertwines between other organic material. This fibrous matter is known as thatch. It's used for roofs in Western Europe (huge in Ireland). Properly maintained, a thatched roof can last up to 60 years in his condition. This is simple speculation on my part.

It's dry because he cut it before searing it and letting it rest, allowing all the juices to leak out. The cut grooves will act as a path of least resistance for the internal juice seeing as those grooves will not sear.

i'm pretty sure this method of scoring meat was in the anime Shokugeki no Soma like 4 or 5 years ago. it's used in a yoshoku (western-influenced Japanese food) dish called "chaliapin steak," along with covering the scored steak in raw, diced onion before hitting the pan. the scoring and the enzymes in the onion are supposed to tenderize it so that even a cheap cut of beef isn't tough

I'm confident he fucked it up by making too deep of cuts when he scored it. I only know this because I saw a Future Canoe video where he tried th same criss-cross scoring pattern on a pork belly, and said the crust ended up being too hard, describing it like hard candy. Notice this guy suggests using a thicker cut because his seems over cooked. I think it might have been fine if he just did shallower cuts when scoring it.

Been doing that for 3 decades, mate. You only need to cut 3/32"-1/8"/ 2-3 mm deep. Just lightly score the surface. Works equally well on the charcoal grill too. I also use a fork to break up and emascerate the fatty veins running through certain cuts like a ribeye. It allows the fat to render down and cook becoming a flavor packed crispy crust itself. Its a great system. Try it!

I like a heavy crust, almost burned is ok as long as the center is pink and a tiny bit bloody. I get a heavy bark on the outside and juicy center. Damn I'm hungry now!

A layer of fibrous matter that intertwines between other organic material. This fibrous matter is known as thatch. It's used for roofs in Western Europe (huge in Ireland). Properly maintained, a thatched roof can last up to 60 years in his condition. This is simple speculation on my part.

I've been cooking my steaks like this for years. Its an easy way to get a nice crust. Especially if you only have a low heat oil.

It's dry because he cut it before searing it and letting it rest, allowing all the juices to leak out. The cut grooves will act as a path of least resistance for the internal juice seeing as those grooves will not sear.

This is like the first time i see this man cook a steak and NOT make it Raw
i'm pretty sure this method of scoring meat was in the anime Shokugeki no Soma like 4 or 5 years ago. it's used in a yoshoku (western-influenced Japanese food) dish called "chaliapin steak," along with covering the scored steak in raw, diced onion before hitting the pan. the scoring and the enzymes in the onion are supposed to tenderize it so that even a cheap cut of beef isn't tough
