  • Nick! I want your opinion and I hope you see this. My father (rest in peace) had perfected his steak cooking to what I called a medium rare plus. Perfect warm red center but the trim was just turning pink, just breaking the layer of medium. Such a beautiful flavor even for a $2 steak sometimes. God I miss his cooking almost as much as I miss him. Love the content Nick!

Huge fan of sirloin and filet mignon as a dish, but the chuck steak as a cheap cut for barbecues sounds like a plan! looks a very nice cut of meat with plenty of marbling.should be a very nice flavour without too much effort to demolish any trims

I can say that nowadays (I'm almost 50 yrs old), I prefer much less fat but still very tender. there is a cut called akami (filet mignon) but has almost zero fat. it was amazingly good - rich with flavor. I still enjoyed marbled beef once and a while but eat it much less often.

  • I think you might want to try experimenting with adding pepper to steaks after cooking rather than before. surprisingly pepper burns pretty easily so if you're cooking at a high temp you're basically just burning it right off and not getting any benefit from it, whereas if you add it after cooking you'll get all the benefit from the pepper flavor. Try it out and see what you think.
