I cook BACON in the oven. You will forever forget about store-bought bacon!
BACON IN THE OVEN without a smokehouse that everyone can get.
Bacon can be seen as a versatile snack. How many recipes can you make with bacon? Try this simple recipe.
Cooking recipe and ingredients:
Pork belly 1 kg
Rinse well and dry
25 g nitrite salt 0.5-0.6%
1 teaspoon of sugar
1/4 teaspoon thyme
1/4 teaspoon dry garlic
1/2 teaspoon smoked paprika
Black peppercorns
1 bay leaf
1 sprig of rosemary or a pinch of dry
Chill for 4 days
Rinse well under running water
Dip in with paper towels
The temperature inside the loaf is 70-72 ° C
Place in an oven preheated to 100 ° C for 3 - 3.5 hours

  • Looks very good. I used Black Strap Molasses instead of sugar, and added a few ground Juniper Berries with the black pepper corns. I had Pork Loin I needed to use. Fresh side (Bacon) would be better. I will smoke this with Pecan wood to a golden brown.

  • Спасибо за красивый ролик. Я делал подобное ( бекон) за 1ч 40мин при минимальном огне в духовке температура внутри мяса достигла 80-ти градусов и продолжала расти; думаю,что за 3ч в духовом шкафу мясо станет сухой корочкой сверху

  • Приготовила по этому рецепту, а другой кусок 45 мин варила в специях и луковой шелухе для сравнения вкуса, др. был вкуснее, вот такой вердикт от моей семьи. Надо пробовать и выбирать. Всем успехов.

    • Такое надо варить заливая исключительно холодильной подсоленной водой на тихом огне и медленно доводить до темпер бульона до 70 , 80 градусов в течении часов 4. Так как нитритная соль при темпер 100' превращается в яд.
