Do you break apart the ravioli after removing from the press?
Ravioli are cut when you roll the pin on the grid :)

Marcato after you make the dough, do you cut it into 5 or 6 sections before you feed it through the machine? Or feed the whole dough into the machine?
Not sure if Marcato have replied to you yet....? If not, cut portions of dough approx 1 inch thick, flatten out and keep a rectangular shape (roughly same width as rollers), then begin to feed on the widest setting, working your way thinner... For Ravioli and other stuffed pasta, stop at 6. Make sure when assembling them that all air is expelled from each Ravioli. Dough mixture will vary when making pasta dough for stuffed pasta, and plain pasta. Hope that helps? :)
@@FS-mc3cs WHAT IS the dough mixture difference?? is not 100 g of flour or semolina on 1 egg measure??
Which are the dimensions of the produced raviolis? What about the air trapped inside? I make 1000 of them per week with your atlas classic and I am desperate to make my work easier. Do you have a multiple seal without the base?
Ciao! Ravioli are 5x5 cm, if you fill them enough no air is trapped inside. The grid is the one sold with the base. :)

Ciao! This depend on the quantity of ravioli you want to serve: if you use 500g flour and 5 eggs you can make up to 50 ravioli using the tablet 5 times ;)
My stuffing/filling turned out very running.. Yours look more more fasten. What could I have done wrong? They turned out more or less ok, but it would be better with a more fasten stuffing I think..
Did you squeeze the water out of the spinach by hand before using it?

Hi! Could you make a video tutorial for Marcato Raviolini attachment for Atlas 150? I've just bought one and couldn't make it work... Thank you!
I love my Atlas 150 Wellness for making ribbon pasta (tagliatelle, fettuccine, etc.), and for rolling the sheets for ravioli, but I don't like using the machine for the ravioli/raviolini themselves. The filling gets pressed in where the seams should be, resulting in some raviolis bursting at the seams when cooking, and so on. I'd rather hand cut them, cut them with ravioli cutters (like cookie cutters), or use a ravioli tablet. But if you want to do it, here's a video: kzhead.info/sun/ia-yitR9poWgYHA/bejne.html
What is the difference between this tablet and the older model style, both are rolled with rolling pin ,m tear excess away and remove ravioli. The only difference I see is the plastic trays lifts the finished ravioli..I ask because the newer. Model is virtually impossible to find in usa
Ciao Lisa, Ravioli Tablet is more stable compared to other models. It's planty-made of anodized aluminium and thanks to the removable grid it will be super easy detach ravioli.
I have a large one and a small one and a motor for the actual dough section.

Yes, 500g it's enough, if you use pasta sheets at n°6.

I prefer to make ravioli by hand. I feel they're more authentic when made by hand as you end up with different sizes.

They are not really special. You will find them at any larger supermarket in Italy. They are eggs from corn-fed poultry meant for noodle or bakery preparations, "uova a pasta gialla" as we say.
You can get same eggs at any famers market
