How to make fluffy and soft buns without using the oven!INGREDIENTS
200g (1 ½ cup) all-purpose flour;
2g (1 tsp) dry yeast;
20g (1 ¼ tbsp) sugar;
100 ml (⅓ cup+1 tbsp) warm milk;
30ml (2 tbsp) warm water;
30ml (2 ¼ tbsp) vegetable oil;
Hazelnut cream, powdered sugar.
METHOD
Whisk yeast with warm water until smooth. Set aside until foamy.
Combine flour, sugar, yeast solution, milk and vegetable oil together. Knead the dough for 10 minutes, cover and set aside for 5 minutes.
Roll out the dough into a rectangle, brush with some melted butter and roll tightly as shown in the video.
Cut the roll into 7 equal pieces and set aside for 1 hour.
Steam the buns for 10 minutes in a steamer basket over the pot of boiling water.
Fill with hazelnut cream and dust with powdered sugar before serving.

most important tip. If you steam after the 15 minutes turn the heat off or take it off the heat and dont open lid for additional 3-5 minutes. if you let the room temp air hit thats what causes the shrivel effect. Can save yourself heartbreak by leaving it in the hot steam for a couple minutes to come down temperature somewhat so its not as drastic.

You must have got water on the mantou, it will shrivel up and go hard if you get water on it after steaming.
Came here after reading the heavenly man where prisoner were given mantou once a week so I wanted to know how mantou look and made of.

You can freeze them after you steam and let cool. If you freeze the dough, that will kill the yeast and you'll end up with a much less puffier dough. Another tip would be to let the dough proof a second time after you portion them. You will get a much lighter bread.

It’s a fake recipe, clearly even if you followed the steps and correct amount of ingredients it won’t come out the same as in the video. Don’t fall for this clickbait!
A few days ago I followed this recipe and made some minor adjustments because of an error and It came out great.

I also made it with this recipe and turned out great. I adjusted lower sugar, lower milk, I took also fat free milk, finally I added some salt cause I prefer my bread salty. It was perfect result.
I also didn’t flatten them out and then roll I just made a long fatty stick and cut it in small portions of around 2/3 fingers
