They're gone in 1 minute! My wife asks to cook them 3 times a week! Simple and delicious. Better than apple pie!
skin of 1 lemon.
We heat 1/2 liter of milk without boiling (18 OZ).
Add zest of 1 lemon and let cool to room temperature.
2 eggs.
120 grams (4.2 OZ) sugar.
10 grams of vanilla sugar (1 teaspoon).
50 grams (1.7 OZ) cornstarch.
Cook over medium-high heat, stirring constantly, until thickened.
100 ml (1/2 glass) water and 100 ml (1/2 glass) milk.
80 grams of butter (6 tablespoons).
1 pinch of salt. 1 teaspoon of sugar.
Heat until the butter has dissolved.
120 grams (4.2 OZ) flour.
Cook over medium heat for 2 minutes, stirring constantly.
Leave the dough to cool for 5 minutes.
3 eggs.
The dough should slowly pull away from the spoon.
Depending on the size of the eggs, we need to add more eggs.
Grease with the remaining egg.
Place in a preheated oven at 180°C (356°F) for 30-35 minutes.
250 grams (8.8 ounces) mascarpone.

Это тесто на эклеры. Его не нужно смазывать. Просто отсадить как эклеры или профитроли. Другой температурный режим, чтобы внутри пропеклись и хорошо поднялись. А в образовавшуюся пустоту или кармашек отсадить крем.
Но это не эклеры.Вся фишка этих пироженых в том, что крем виден.Но это тесто на слоёное похоже и оно не поднялось как на эклеры.Но очень аппетитно выглядит👍

It's a typical choux paste recipe but why did they come out so flat? I make eclairs and cream puffs and they are always puffed up. I LOVE the idea of adding marscarponi to the custard filling. Delicious 😋
I love the directions for the filling! So many uses. I prefer to use the choux paste batter as a cream puff shape. Same filling, same batter, but piped out into more of a ball shape. The pastry was too thin for the amount of cream. I think it would fall apart as soon as you picked it up. Different shape is all. Same ingredients. Delicious!

@@d.b.4201 if you look for a video for making cream puffs you will see what she means by different shape. I'm thinking I may just make filling and and eat it as pudding.

@@cherieavery6636 agreed I find it too soft just by watching. Wonder if looking at another choux paste recipe and tweaking would help with the softness. He needed to boil before adding in the fat. The paste needs to be 165f to175f. He cooked it in too slow of a oven. Should start with 450 then when put in should turn down to 400. For large ones like he made when done turn off oven open door let cool in oven. For some thing so large maybe leave out the milk as it causes darkness and with the size it needs longer cooking. I would start at 450 when it goes in right away turn to 400 bake 1/2 time then turn down to 350. When done if not too dark leave in with door cracked to dry out alittle. It's all I'm the science. It's not cooked to do with moisture but what the heat dose to the flour proteins. Hope this helps.

I agree that the filling was too much for the thickness of the baked choux paste. Since you seem to know baking pretty well, I hope you can help me with a small problem: I cannot get mascarpone where I live, so I was wondering if I could substitute it with cream cheese in the filling. What do you think?
@@luckydelauta3859 I actually have used cream cheese in place of marscapone. It does have a different consistency and taste. It still turns out deliciously. You can ask your grocery store manager to order for you (in USA) and they’ll usually do it for you. There are others probably looking for mascarpone too. The filling was a bit too much but I honestly like it that way. Good luck.

Вы что эклеры не видели? Но здесь испорчено тесто оно не поднялось почему то. Внутри должна быть полость для крема ,но её там нет. Рецепт никуда не годен.

Что-то пошло не так с заварным тестом, оно у вас совсем не поднялось(((( и допишите, пожалуйста, количество маскарпоне в рецепте под видео, в ролике вы добавляете, а в описании под видео о сыре ни слова.
Это потому,что после заваривания теста добавил много яиц.

Я прошу прощения, я кондитер с 40 - ка летним стажем. 🙏 Они у Вас не поднялись и структура выглядит при разрезе сыровато. Надо выпекать 10 минут на 200 ° и 30 минут на 180° и не в коем случае не открывать духовку при выпечке... Эклеры не зависимо с легка жидковатое как у Вас, или густое тесто - при такой температуре получаются на все 100 % ... It’s a very common Pâte à Choux (Choux Pastry). His were likely much more inflated but fell because he let them sit. Need to poke hole in them immediately after removing them from oven so the insides will dry out

I will definitely try to make this recipe. I like the filling and kind of not too difficult to make. I can also buy a ready made bread from the store like perhaps plain croissant then stuff it with this filling. Delicious!
