🦞LOBSTER QUESADILLA: Boil dice carrots, onion, and celery. Add lobster and let boil for 10-15 minutes. Once boiled, remove lobster from the pot and place in an ice bath. Remove the lobster meat from the tail, then dice the meat. Separately, mix together grated pepper jack cheese, white cheddar cheese & 3 stems of scallions. Lightly brush olive oil on the outer part of the 10-inch tortilla. Sprinkle ancho chili powder. Add cheese. Add chopped lobster meat and sprinkle a touch of cheese then close. Place on a flat top grill and let cook until golden brown on both sides.Squeeze chipotle Cremer on top and drizzle salsa in the middle. Sprinkle green onions on top.

3. ATLANTIS BEACH

🦞LOBSTER STUFFED BANANA LEAF: Grill the banana leaf on the grill to make it pliable. Place the banana leaf down first, then add the three ounces of the cook grits as the base. Add two ounces of lobster filling on top of the cooked grits. Oil all 4 sides of the banana leaf to help it stick together and fold. Once that is done oil the grill and place the stuff banana leaf on the grill and cook for 6-8 mins. Once complete open the stuff banana leaf and garnish with the mango salsa, micro greens and olive oil.

4. FRANKIE GONE BANANAS
ADDRESS: Atlantis Resort - Paradise Island
INTERVIEWEE: Chef Maxine Smith
​​🦞LOBSTER TAIL: Blend ingredients (Cilantro, parsley, spring onions, garlic cloves, ginger, lime juice, lemon juice, olive oil, jerk sauce, fresh orange juice, sea salt and pepper) together. Rub evenly on Lobster, place on an open grill to mark. Remove from the char grill and place in an oven at 350 degrees for 20 minutes. Serve with salad, sweet potatoes & salad
🥗JUNKANOO AVOCADO SALAD: Peel and dice mango, pineapple and avocados. Slice purple red orions and heirloom tomatoes. Place all ingredients (including fresh orange juice, lemon juice, small red onion (sliced) & lime juice) in a mixing bowl and toss, season with salt and pepper.
🍌PLANTAIN: Toss plantains with olive oil and roast until golden brown. Take out of the oven and sprinkle on cinnamon and honey.

  • When I was a kid, Randy Nadler used to come to our school and share slides from his travels around the world. From Papu, New Guinea to Turkey. He showed us architecture and animals native to countries from all over the world. We looked forward to his visits every year. Fast Forward to me being an adult and I still get excited for a new video from Sonny and the gang, documenting their travels and experiences with local cuisine and people, just like I did with Randy.   • Yayyy you finally came to my country , but we do have true Bahamian dishes you just need to find the right bahamian mum to let them cook for you. Yes you can go on the family islands and ask one of them but there are sooo many bahamian dishes that itll need to be couple videos long. Some may seem bizarre like flour pap and souse with johnny bread but i know that's what your all about. Dont forget about dessert , guava duff

  • IMO the tomalley is the BEST part of a lobster. Just add some lime juice and hot butter to it and it becomes the perfect dipping sauce for the meat.

  • Fun fact: this lobster is called the spiney lobster and is indigenous to the Caribbeans and gulf coast and Florida including the florida cays (although it has been fished to extinction in most of these areas). We also typically use the fat of the crawfish as we call it in rice. And the antennae on the head of the lobster pack a punch and can actually break fingers, they really hurt.

  • I actually used to LOVE eating the tamaley here in the US. I was told that it was filled with heavy metals and poisons and not to eat it. I’d tell people it was like concentrated lobster flavor. That two teaspoons of tamaley has as much flavor as the rest of the 2lb lobster.

  • My family's first trip ever out of the Americas was there and being of adventurous mindset we asked a local cabbie to take us to the places that he goes to eat. A bit of a risk (watched too many travel shows ) I know but it ended up being the best decision ever.

  • When I was in the Navy, my submarine used to go near the Bahamas. More specifically than that, I am not at liberty to say. I was a sonar technician. Whenever we were near the islands, there were tons of motor boats and Seadoos. My sonar supervisor told me to just ignore them and not gain all those contacts. But I have never visited the islands, which I hope to do some day.
