So the ingredients are:
🍰 pistachio flour 60 gr (you can crush pistachios with a rolling pin or through a blender)
🍰 Almond flour 60 gr
🍰 Wheat flour 30 gr
🍰 Proteins from 4 eggs or 220 gr
🍰 Powdered sugar 220 gr
🍰 Pinch of Salt
🍰 Pistachio paste or dye for a greener color.
For cream:
Curd cheese - 300 gr
Cream 33% - 200 gr
Sugar -100 gr
Raspberry 80 gr.
1. Beat the whites at medium speed and gradually add the powdered sugar. After the appearance of a thick foam, add more than half of the powder and beat at maximum speed until stable peaks (7-10 minutes).
2. Add dry ingredients: flour, pistachio flour and paste or green dye. ⠀
3. We cover the baking sheet with parchment, or better - with a Teflon rug! We spread the meringue and level it (layer ~ 1 cm, 30 * 40 cm). At this stage, you can sprinkle with nuts or almond petals) But I often forget about it 😂
4. Bake for 25 minutes at t 140 ', top-bottom.
5. Cover the finished roll with parchment and turn it over (together with the bottom parchment). Let it cool slightly and then remove the top sheet (very carefully!). ⠀
6. Prepare the cream: mix all the ingredients with a mixer, put the cream on the cooled meringue and level it around the entire perimeter.
7. We lay out the berries on the cream (you can in a row, you can randomly). As a filling, fresh berries give the dessert a special charm.
8. We turn the roll, helping with parchment.
