🍖ROASTED OSTRICH: Defeather and clean the ostrich. Place in a large container with a mixture of red wine, water, salt, pepper, garlic and sugar and let it marinate for 26 hours. Cut off it’s neck and wings and put aside. Rub and stuff the bird with garlic, herbs, basil, thyme, oregano and a secret Quan Ut Ut ingredient. Put the bird in the BBQ pit and smoke for 2 hours with jackfruit wood. After, pour more wine inside the tray with the ostrich and add onions, carrots, water, BBQ power and thyme. Finally, put a towel on the ostrich and cover it with foil. Place in the BBQ pit for 16 hours at 105C degrees. Take the cooked bird out and hand shred the meat for serving. Serve 200grams of shredded meat on a platter with house cornbread, pink coleslaw and mashed potatoes with the au jus gravy.
🍲AU JUS GRAVY: Separate the fat from the Ostrich juices by putting the liquid in the fridge to cool and then skimming the fat layer, leaving the collagen and broth. Make a roux by adding oil to a pot and sautéing onions and flour together. Add the ostrich broth and mix slowly. Add flour until the mixture becomes thick.
🥚GIANT DEVILED EGGS: Boil the giant egg in 1.5 hours, then take it out of the pot and let it cool in a bowl of cold water for 15 mins. Remove the egg shell and cut it into two. Scoop out the yolk and put it in a bowl with pepper, cayenne, salt, paprika, and minced pickles (cucumber and jalapeno), mayo and bacon. Put the filling in a plastic bag and squeeze it in the egg white. Top with bacon and jalapeno.
🍖GIANT BUFFALO WINGS: Boil wings for 20 min then remove remaining feathers. Place wings in a fryer for 16 - 18mins until golden brown. Place the cooked wings in a big bowl with buffalo sauce. Garnish the wings with coriander and serve with blue cheese.

  • They tried to develop a market here in Colorado. Very little fat in ostrich meat so you have to cook it correctly or it gets dry. People didn't know how to look it and the market failed. Now, the nearest processing plant is in Texas if it's still there. I bought an ostrich from a farmer who was getting rid of his birds, butchered it, we ate it, and I mounted the bones. Took me 2 years.

  • The ostrich has so much potential as an agricultural animal. They have an excellent feed/meat conversion ratio and that is still with the wild type. After a few generations of selective breeding you could get a more meaty, better converter with a more laid back temperament. Southeast Asia has become an ostrich farming hub. Wishing them luck with their farms in the future 👍

    • How the ostrich tastes depends on the age of the bird and what they are fed. A young bird fed on Turkey feed and alfafa pellets is quite good. The fat is yellow because of high vitamin A, also ostrich fat has commercial value as a base for cosmetic products. In the 20s people thought Turkey would never catch on because they were wild, hard to raise, gristly birds.

    • Animals taste different depending on their diet. That's why humans don't normally eat carnivores. Not only can you more easily get diseases from them if the meat is even slightly undercooked. But they also only eat meat. I'm assuming ostriches are going to have a somewhat similar diet to large mammals like cows. Therefore they're probably going to taste similar.   • Well done guys you rock!! We cooked an entire ostrich (male adult bird) on an open fire using a hand cranked rotisserie in my home town of Durban KwaZulu-Natal South Africa. I got the bird from my cousin who owned a game farm down in the karoo. We started cooking it around 09h00 and with gallons of basting and continuous attention to turning the the bird and watching the fire size and heat. The bird was ready around 16h00. It was for my good friend Pete who was a commercial diver at the time and still is and he wanted something different for his birthday party. Well needless to say we only dented the one leg (huge drum stick) and everyone one left with enough meat to last a few weeks at each house. This was done in the late 1980's and the only record would be a few printed photos. Cheers and thanks for the awesome clip !!!
