While I speak neither french nor Louisiana creole, a creole in general is when multiple languages mix together and then over time become one language with its own rules that and grammar and vocabulary and syntax that is an amalgamation of its constituent parts. Like, sometimes I'll hear bilingual Spanish-English speakers switching back and forth or do Spanish grammar to English words like "talkando" or "hablaring" instead of "talking" or "hablando" but it's kind of just it's kind of just freeform, there's no real rules here, they're just doing whatever. A creole is like if you took that and systematized it. And maybe even threw in some new things like hyperlocal slang and isms or got rid of some rules that nobody in the area was following in the first place. Again, I must emphasize that this is just my understanding of creoles in general, not this specific creole, but I have to imagine that french taking a shot southern united states english and then being left to simmer a couple hundred years, would be largely unintelligible to many modern french speakers.
