Pasta All'amatricana is a very classic Italian pasta dish that goes back years and years. It's one of those pasta dishes, much like carbonara, that is so beautifully simple, but delivers no matter what mood you’re in, or what time of year it is. This is an absolute must have in the repertoire - give it a go, you won't look back!

I was thrilled when we met the man himself (and took a photo together) whilst in London in July last year. We had just traveled throughout Italy for 3 weeks, yet we ran into him in our hotel lobby in London on the way home to Australia, go figure!

The longer I cook Italian food, the more I realise that the simpler I make it, the better it is. There is a lot to love about French food...a lot....but geez, Italian food I think has it covered for the home cook

It’s a different version than many are used to. It’s a chopped tomato on pasta dish. The popular version is the tomato sauce version

Not really. This is so deviated from what an Amatriciana is, that it isn't the same dish at all. It's not necessarily about tradition, he has just created something completely different, which no doubt is delicious, but not the same thing. So why call it an Amatriciana?

When an italian uses pancetta instead of guanciale everything is fine. When someone who is not italian does that, even if he says that normally you wouldn't use pancetta, italians go crazy in the comment section^^ But I have to try this one. Italians use not many ingredients but they make them count. And he is pretty much everything I like about italy in person.

To be honest that pancetta looks more like guanciale than pancetta.
@@65fhd4d6h5 we, in Argentina, always have available smoked and cured bacon. Is the cured bacon = "pancetta"?? Cuz we call them both "panceta", we just specify if cured or smoked. Need to understand this.

Ooooh so THIS is what my grandma used to cook for us back when she was alive. Thank you! Also there's a typo in the title. There's an "i" missing after the "c". Italian uses "ci" for the sound of "tshi". "Alla matricana" (without the i) would sound like "All-Ah-Mattree-kan-a"

Idea for this year's April Fool's video: a behind the scenes interview with Genarro where he's dubbed by a voice actor with a lower tone, totally neutral accent, and introduces himself as Johnathan Bigsby, the actor who plays the character Gennaro Contaldo on the reality TV KZhead channel, Jamie Oliver's Food Tube. And he alludes in his interview that other people from the channel are just characters as well. Let me know what you guys think lol
