If using instant yeast use less. I made this with 7g if instant yeast and it tripled in size instead of doubling, ended up being an American style deep pan pizza.

When I have a crap day I come and watch Gennaro, never fails to cheer me up. If everyone had the passion for what they do that Gennaro does the world would be a million times better.
The way he explains the science of Yeast. Much more understandable than my teacher.
Except yeast doesn't produce oxygen, it produces carbon dioxide. A small error that makes absolutely no difference at all to the magnificence of this video!

Did it yesterday. Wonderful dough!!! Loved the texture. My pizza was amazing. Just to give you an idea: I put Béchamel sauce, mozzarella, smoked Gouda, smoked blue cheese, mushrooms, fresh basil, garlic powder and pepper on top, Splash of olive oil. Delicious.

I have tried this. And you are right about bread crumbs, they make pizza even more crusty. Everyone loved it! making it today again trying with semolina. TY Sir Genaro!
How did you make the bread crumbs or did you buy it?
I usually buy them, they are very cheap. But you can make them if you have old quality bread just mix them in food processor. For some reason pizza with "semolina" was sticking to the pan, so I would advise using bread crumbs.

+Jonathan-Emily Powell That's not the same recipe, though. You can't convert weight to volume. There's no way. I've been making my own pizza dough for a year now and it was extremely inconsistant until I started weighing the flour. Also won't come out right with 'bread flour' or all purpose flour. Find a local restaurant supplier if you don't have a DBA and you can get restaurant flour that has the 'gluten' you require. All Trumps is really good, but there are many others. They come in 50 lb bags. Just keep them cool and as tightly closed as you can. Going around telling people you can use 'this amount of cups' when its based on the weight is like saying "Hey, can i get a few pounds of gas in my car?" Doesn't make any sense. If you need a machine to weigh, hit up a headshop and get one of their little weighing machines. it's what I did, was 5 bucks at a gas station that sold paraphernalia when I was getting a drink one night and I just set a large container on it that is see through to fill up the flour with. If I go 5 grams over or under, it's a complete disaster of a difference. You also don't need to proof. It'll come out the same, just make sure your water is warm enough and mix it right up in the water with a whisk before adding the flour and you're good. Learned from a restaurant opened by a guy from NYC but modified it over time.
