Due to popular demand, in this video we take a look at how this newly popular huge Castella Cakes are made at a bakery.
This video contains the making process of this jiggly cake

  • Hi guys just to clear up any misunderstanding about the 'gloves being too short', yes normally for stirring the big pot with their arms, they do not wear those short gloves, me filming the baker may have put him under pressure and cause him to forget to remove the short gloves when he needed to mix the batter. The bakery kitchen is closed concept kitchen and is very clean, the staffs always washes their hands when its going to be in contact with food. This video is not sponsored by the bakery and we made it cos many of you guys been requesting to see the process of the jiggly cakes being made. We are thankful for them for allowing us back in the kitchen and showing us how they bake their giant jiggly cake!

    • I finally tasted jiggly cake and it’s really really good! Not that sweet at all, but the texture and faint taste is really good, especially with some berries and homemade whipped cream on top!

  • He washed his hands/arms. Practically almost bathed, he looks hairless. And they did state that they use longer gloves for mixing of the batter. They just got nervous for the filming and forgot to switch them. 100/10 would still consume.

    • p pete arms sweat I take a shower before the gym and I still sweat when I’m moving around. That doesn’t make me sanitary. There’s a reason you also need gloves on while cooking even after you wash your hands.

    • People are crazy these days when it comes to food, that's so crazy to witness. I know lots of people who cook their own family dinners wearing gloves, can't touch eggs, raw meat and stuff without getting hysterical. There's a difference between a clean way of handling food and being hysterical about it.

    • Agnes CF Lee It's really not that hard. Mix the egg whites with a pinch of salt seperately to stiff peaks. Then incorporate carefully by lifting and tucking under to the rest of the batter, to not destroy all the airbubbles. There you go.

    • You can look it up..its called Castella cake :milk, oil, yolks and flour mixed in one bowl and sugar and egg whites in the other till you get a meringue then you fold the meringue into the the flour, oil,yolks,and milk.

  • Enjoyed watching, reminded me times working in a bakery. 25 years ago we didn’t have a clue about gloves, everything was done barehanded 😉👌🏼 and nobody ever worried about germs. And I still use my bare hands to cook and bake. Complaining probably those who never have done anything😊

    • Toga Emrich You chill, I'm a Pastry Chef, I've been professionally trained and you? If you don't want skin surface contact on your food stay at home. These people are working to industry standards which the health dept involved and have sufficed their glove requirement. The Japanese are so clean you can practically eat off their floor. They're not in the kitchen rolling in dirt, I'm sure you've had plenty of nastier things in your mouth before! Now if your head can bob up and down between another human beings legs, whose been at work all day and sitting on nasty toilets, then you'll be just fine with this skin contact. Don't say that you don't cause we all know you do. Facts!

  • Lol just so all of you people know, in the food industry it's fine to not wear gloves unless you're touching meat or other cross contaminates. The health department doesn't require people to wear gloves when mixing even cake batter. I've worked at a lot of bakeries as the head baker/recipe developer (including volunteer work at michelin star restaurants) and I'm telling you this right now: If you're going to cry about gloves, don't ever eat out ever again. Stay home and make your own food. I promise you 95% of restaurants/bakeries don't have gloves on their tiny hands all day. We touch and stroke your food.

    • Sorry to say, a lot of meringue based cakes made in large batches are mixed with the WHOLE arm. So you should consider staying home and making your own cakes. It's not as simple as you think it is. Making meringue based cakes in huge batches requires technique. Using the arm gives you more control and you're able to mix more carefully. Try getting a 16oz cup full of meringue and fold in your ingredients with a single chopstick. That's what it's like using a long spatula in a deep giant mixing bowl. Also, if you're okay with people touching your food then you should be okay with someones arm which has been thoroughly washed, just like the hand.

    • No one wears gloves when cutting meat. You just wash your hands before and after. The only reason to wear gloves (for hygiene reasons at least) is to cover burns/cuts and to ensure dressings/bandaids don't fall off.

    • In Providence (the restaurant I worked for), the Rotisseur was required to wear gloves. Especially in our fast paced kitchen.

  • Most of people who leave comments about not wearing gloves don't really understand about food safety. They judge on what they saw just because it isn't popular with them. Why don't they ask about someone doesn't wear gloves when kneading bread dough? Basically, these two actions are the same. Further, the batter or the dough will be baked later so the heat will kill the bacteria. And more, elbow length gloves can't prevent falling arm hair like someone comments below. The chef washed his entire arms before touching the food that will be cooked and it's not a problem at all.

    • Jewel Pham I disagree, we wash our hands so often most dead skin is sloughed off. How often are arms rigorously washed to remove dry skin? Even if there’s heat I find it unappetizing.

    • i automatically wear gloves when i'm baking, especially if its a birthday cake, beats getting food colouring all over your hands. I always wash my hands before putting the gloves on and again when they are on.

    • Yo encontré la receta en tasty, es muy facil de hacer, no puedo decir que sea realmente delicioso, creo que la palabra es "diferente" lo hice una vez y no lo volví a preparar por que a mis hijos no les gustó. Practicamente se tiene que consumir al momento ya que al contener en su mayoria huevo se baja rapidamente su volumen. Si tuviera la receta te la compartiría pero decidí no guardarla por lo antes mencionado.

    • Basically. Looks like a fairly standard sponge cake with meringue folded in. I like the idea. It's an easy way to incorporate a lot of airiness into the batter without relying on additional ingredients.
