Very soft and delicious castella cake recipe

Material:
60 ml milk
50 ml cooking oil
70 grams cake flour (you can use all-purpose flour)
4 egg yolks
1 teaspoon vanilla extract
Meringue Ingredients:
4 egg whites
1 teaspoon lemon juice
70 grams of sugar
Pan size 16x16x7cm
Bake at 150°c for 60 minutes

  • This cake would go so well with hot chocolate, jam, pastry cream, even icecream... Even with salted butter, because here in Portugal we have a similar cake called "Pão de Ló" and I like to slice and put in the toaster and then I spread butter on it, it's like a sweet toast with a good contrast from the salt in the butter :)
