Today I made a strawberry roll cake.🍓
I really liked the combination of sweet and sour strawberries and savory almond crunch.
By recrystallizing sugar, we made sweet and savory almond crunch from almonds.
Freeze-dried strawberries decorating the roll cake make it look even more special.
The strawberry buttercream was made with Swiss meringue.
I made it with egg whites left over from making vanilla castella sponge cake.
(I like recipes that use all the eggs.)
Castella cake has a high egg yolk content, so it has a dense and soft texture.
The almond crunch we made together is so delicious that you can eat it on its own, so you'll probably need to make plenty.
It's an addictive taste that makes you want to eat it over and over again. 😁😄

237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (38% milk fat)
(Chocolate is chopped, flour is before sifting)
● Vanilla castella sponge cake

15 g unsalted butter (1 Tbsp)
25g milk (1Tbsp+2tsp)
5~6 yolks (90~95g)
20g sugar (1Tbsp+2tsp)
a pinch of salt
3 egg whites (105g~115g)
60g sugar (4Tbsp+ 2tsp)
55g cake flour (1/3 cup + 2tsp)
● Strawberry Buttercream Frosting
(Swiss meringue method)
2 egg whites (70g)
95 g sugar (1/2 cup)
a pinch of salt
145 g unsalted butter (1/2 cup +4 Tbsp)
3ml lemon liqueur (optional)
20g strawberry powder (1Tbsp+1tsp)
food coloring (optional)
● Caramel Almond Crunch (Croquant)
50 g chopped almonds
30 g sugar (2 Tbsp)
10 g water (2 tsp)
● Strawberry Syrup
30 g water (2 Tbsp)
20 g sugar (1 Tbsp + 2 tsp)
3ml strawberry liqueur
