Turritopsis dohrnii is a species of jellyfish that some scientists say can live forever by reverse aging, over and over again.
In a process called transdifferentiation, these jellyfish can transform their dying adult cells into new healthy cells.
Since they’re so hard to catch and keep in a lab, only a handful of scientists study how they do this. Their research may lead to insights about how to treat diseases like Parkinson’s by replacing lost or damaged neurons in the brain.

I wonder if it would retain memories? ...does a jellyfish have memories? does it Learn?
We still have a hard time to completely define what memory is in us, humans. Perhaps they don't store memories like mammals do as they technically don't have a brain, but they do have some sort of nervous system. I.e. It's unlikely they have memory (like we remember things). I assume you ask that because you wonder if it keeps on regenerating, would it still be the same jellyfish as it was two weeks ago? That would be interesting.

Yeah that would actually kill her but just taking jelly fish out of water would kill her because its 95% water and it cant live on dry
