Easier souffle pancake with 1 egg

I'm sorry.
The amount of sugar is 20 ~ 22g (per egg)!
When the video starts, select the subtitle language you want to view in the settings on the screen. There are several subtitles by country.
ingredients- 2 small sizes or 1 large mousse ring of the image
1 egg yolk
12-15g of milk (1 table spoon)
0.5g of salt (1/16 teaspoon )
Vanilla paste ( vanilla extract ) slightly (can be omitted)
15~17g of cake flour (1.5 table spoon) - all purpose f flour, flour-based rice powder available
1 egg white (35g to 40g)
20~22g of sugar (1.4 table spoon) - you can reduce the amount of sugar slightly depending on your taste
5g of lemon juice (1 teaspoon)
- Lemon juice can be omitted. You can add vinegar instead of lemon juice.
If you add lemon juice, it will be easier to mix the mixture because it will be less extinguished when mixing the meringue and the dough.
Bake 6 minutes on one side + turn it over + 5 minutes + Turn off the heat, cover and let stand for 2-3 minutes.
Please adjust the baking time by referring to my time.
The place I baked the souffle pan cake is the pan (grill).
It is not an oven.
Cook on low heat.
Not very low heat.
It's between the low and medium heat.
It is about 180 degrees Celsius.
12cm in diameter * 5cm in height with mini mousse ring
Teflon paper inside is 4 to 4.5 cm high (paper parchment possible)

just made this today, the taste was vey delicous airy, soft, light, and melts in your mouth, the only thing was i couldnt get it to fluff up like yours, mines deflated sadly but other than that great recipe
With practice, you can make it better than me.
Adding a bit of creme of tartar will help stabilize the meringue better and will help with the pancake to fluff up

By the way guys, when the meringue is being folded into the dough, it is important to do it the way you see in the video, or search up how to fold in meringue- This method is used on order to keep the air in the dough so that the pancake will turn out fluffy; if you just mix it in instead of folding it in, you'll have a flatter and less fluffy soufflé pancake :) Edit: Thanks so much for the likes guys! @@korvusmangata9007 you still could, as long as you don't stir it, if the batter folds over the rest then it should still be okay! It won't be as good as folding it in with a spatula but it would still be quite fluffy :)

I was actually to surprised to see her stirring the meringue as much as she did as that usually deflates it. She more stirred it in then she did folding but it worked.

@@user-ep2vd4vi9t , можно делать суфле без сахара, толь из яйца, взбивая белок, внутрь положить желток, сверху опять белок и все это выпекать в формочке, типа кольцо без дна, на сковороде под крышкой пару минут, практически без масла. Или в духовке запечь в формочке с дном. Получится нечто такое же воздушное и пухлое, но без муки и сахара)

In fact, I was really curious and needed it. It was really difficult for me too, I failed dozens of times. So I thought it would be helpful to the next people. I turned to the 5th stage of the 5th mixer. And because it was in a beaker, it was fast. But more important than time is the state of the whites. Foam until the tip is pointed and softly bent.

I have made them and honestly it’s soooo good. But I do have some advice to make them taste better : - do not hesitate to exceed the time indicated to properly form your meringue. - if your meringue is not firm enough, leave it in the fridge for 15-20 minutes or your pancakes will not be puffy. - if you choose to fry them in a pan, cover them and don't leave them too long. In any case it is definitely a recipe to redo. Thanks!

The egg white has to be room temperature. This is crucial. I have realized that all of these souffle pancake recipes omit that essential factor. If not room temperature, the whipped egg white will not hold and collapse.

Eggs in general are better when they are stored at room temperature. Most countries don't refrigerate eggs. The only ones that do are the ones that scrub wash the protective membrane off the egg shells before they reach the stores.

Tips: The egg has to be at room temperature. Also, when you are adding the 2 mixtures together, add them quickly, and get them on the pan quickly or it won't be able to become “fluffy” and it won't work. If you already mix one of the mixtures for 3 minutes, and it is not fluffy yet, keep on mixing. THE MOST IMPORTANT THING IS TO MAKE SURE THE EGG IS AT ROOM TEMPERATURE or else it might not work. Remember to only add 20 grams of sugar, not 40. For the cake flour, I took 1 tablespoon of all purpose flour. Then, I took out 2 (so basically I used a 1/8 measuring tool and took out all purpose flour with the 1/8 meausuring tool 2 times) 1/8 tablespoons of all purpose flour. I replaced the 2 1/8 purpose flour with 2 1/8 tablespoons of cornstarch. Finally, I sifted them together. You can also just mix them if you don't have sifting tools. If you guys were confused on when I said take out two, I mean you take out 1/8 of a tablespoon of cake flour. And u do that twice. Then you replace it with the same amount you just took out. (You replace it with cornstarch ) sorry this is kinda hard to explain.

Thanks for this simple recipe! I used unbleached all-purpose flour and it still tasted soft and tender, although I had to double the amount of milk to achieve the desired consistency (seems like my flours absorb more water than other types of flours do). I used cold eggs which might be the reason that my pancakes were not that "fluffy" but they still looked and tasted delicious. I'll try the room temperature method next time. One shortcut to get eggs at room temperature quickly is to put eggs in warm water for a few minutes. For those who want to make "cake flour" at home: Get 1 cup of all-purpose flour. Remove 2 tablespoon of flour and replace with 2 tablespoon of cornstarch. Sift to make them mix well. Now you get 1 cup of cake flour. (For reference: 1 cup of flour is about 120g. 1 tablespoon of flour = 8g. 1 tablespoon cornstarch = 7.5g.) Simple as that. (But again, I used all-purpose flour only and it already tasted great.) Finally, it's very thoughtful for the author to offer the accurate timing of adding sugar; however, due to the variety of mixer wattage and beater shapes, not every mixer works exactly the same way. It's better to add sugar based on the meringue's status rather than time duration. Thanks again for this wonderful recipe. This is the first time that I successfully make TENDER pancakes! :)

I made them yesterday and I didn't have the exact shape thingy, so instead, I just piled it on. It would have worked if I waited for the first pile to stiffen a bit... Alas, they have been very delicious
