That looks so good and those beautiful flakes, yum. But tbh making croissant with a really homemade ways is the most painful thing that ive ever tried in my baking experience lol. That wasn't 100% homemade though, they folding it using machine, no offense. You should try to folding those hard rock dough with the frozen hard rock butter, its one hell of exercise, i feel like my arm got toned up after that lol. It's better to just buy it at the store :))

It is so ... strange. On one hand, it’s perfect & very precise, clean & also creative job: very good ingredients, spotless kitchen, conservation, cuttings, creations ... And in the same time some essential basics are not followed : Dough should be rested (fermentation), Butter (Tourage butter would be better) should be completely sealed in the dough at first folding. Foldings should be slightly different. One more resting time should be introduced in the process & rolled dough is much too thick. Everything I mentioned are basics from school : That’s why I don’t understand. And yet ... result is very very appetizing.
I think they had found a way to shorten the time because they want to mass produce their product and cut cost while still maintaining the quality of the product.
