  • The sexism that she faced in wanting to become a female sushi chef in Japan is wild. Even if you believed the "body temperature spoils fish" theory, since women have less blood flow to their extremities, their fingers would be colder than men's. So if anything you'd only want to hire female sushi chefs if you believed that. Great video and profile on a great chef!

    • There's a theory that women are colder due to blood circulation whereas men are hotter, especially when you think about it in workforce for example, where traditionally, men will wear suits and thus be hotter, whereas women (traditionally) will wear skirts or dresses and be colder especially with the air conditioner running. It's just so weird that there's this view that women can't be sushi chefs because it'd melt the fish???

    • It's quite interesting seeing how sexism work around the world. When you look into the western culture women are known to be better pie makers because they won't melt the butter as much as a man the reasoning behind it is they have much cooler hands. I can't speak for all women but I do have pretty cold hands almost all the time even in hot summer days. I think it's because fields that seem to be manly get these random theories behind why women can or cannot do

  • I just love how great of a leader Chef Sho Boo is. She's always thinking of the well-being of her team and she clearly cares about them a lot. She seems almost like a mom to them, especially when she was cooking the family meal and when she went to the kitchen to help the guy out that was alone, even though she says she's usually out at the bar. Now that's a leader. I'd love to work for a boss like that.

  • It’s incredibly punk rock of her to become a star chef in her dream position in defiance of all that she’s been told no, and to do it all in another country at a high level. And how she treats/works with her team & her attitude is awesome too! Amazing.

  • She is leadership goals. How to help your team without micromanaging, how to praise your team and show them appreciation throughout the very busy day. She's a gem! Also, I love how she and the team made sure Alvin was well fed! 😂 So heartwarming!

    • Kitchen scissors were the best addition to my kitchen tools in a long time. I especially recommend them for travel or camping. They can take the place of lots of tools, but excel when space is at a minimum. Chopping veg, portioning meats, prepping sides, dividing donuts… they do it all!

  • She made it look effortless, but 13 hour days is no joke. The restaurant business is extremely tough. You really have to love your job as much as Chef Sho Boo to commit to this life. She is a warrior and a poet!

  • I love Alvin's way of narration. it's so calming and sincere. 2:22 is also really sad, it's stunning to see the ways sexism has manifested itself all around the world, and how the habits persist even today, despite any solid evidence... I'm glad she was able to chase her dreams in America.

  • I don't think it was mentioned anywhere in the video that Maki Kosaka is a more affordable offshoot of the Michelin-starred sushi restaurant Kosaka. Damn, I'd love to eat there. The sushi and maki plate looks amazing, and those grab sushi have my mouth watering! Chef Sho Boo and her team are fantastic at what they do, and this video highlights that so well. Kudos for another excellent video, Alvin!

  • As someone who learned how to make sushi for a supermarket for my first college summer break; it's definitely a skill. Rolls need to be super tight and that only comes with practice. I learned with a bamboo mat and plastic wrap (the one guy in the video was rolling with one). I can still make a mean California roll and the diet my doctor recently put me on sushi would be great (she wants me to eat more fish). Always use a little rice vinegar with your sushi rice.

  • I really like this series. It's quickly becoming a reason for me to visit New York City. I've always wanted to go for a week to check out the usual tourist traps but the restaurants featured just make me want to visit more. I'm not a huge fan of sushi and maybe that's because I've not had sushi that looks as good as this. I can only imagine what something so fresh and vibrant looking tastes like. I wish I could find somewhere local that had someone as amazing as Chef Sho Boo and her team.
