Best Mango Cake Ever | 진짜 맛있는 망고 케익 레시피
Hello guys! This Mango mousse took me quite a while to finish, from baking to editing. As you can see in the video, it's a lot of work! At some point I was like, 'is this worth it?' lol But you know what, IT IS WORTH MAKING! It's super delicious. I promise you! The almond, mango and passion fruit flavors are well balanced. And the textures from the fresh mango, mousse, sponge cake and cookies... everything is just heavenly. I hope you guys try this recipe!

*Mold I used in the video : Silikomart Zen 100
Mango puree
Frozen mango chunks 380g
Sugar 30g
Mango gelee
Mango puree 125g
Sugar 20g
Passion fruit puree 45g
Mango chunks (diced) 90g
2 Gelatin sheets 4g
*You can make 6 gelees
*If your puree is cold, warm up with sugar, gelatin to melt in microwave.
Almond sponge cake
2 Eggs 100g
Almond flour 70g
Cake flour 22g
Egg white 90g
Sugar 45g
Unsalted butter (Melted) 18g
* 30cm X 22cm pan
Bake at 375F for 8 to 9 minutes
Mango mousse
Mango puree 200g
Sugar 50g
Heavy cream (Whipped) 200g
3 Gelatin sheets 6g
*I got 170g of leftover after making 6 mango mousse. You can pipe it into cups and enjoy!
Mirror glaze
Water 75g
Sugar 160g
Corn syrup (or glucose) 160g
Condensed milk 105g
6 Gelatin sheets (12g)
White chocolate (Couverture) 160g
Food coloring, yellow
Vodka, food coloring red & green for airbrush.
* I used Mastercraft airbrush compressor.
Almond sable cookie
Unsalted butter (Room temperature)100g
Powdered sugar 50g
Pinch of salt
Vanilla extract 3g
1/2 Egg 25g
Almond powder 30g
All purpose flour 135g
Bake at 350F for about 12 to 15 minutes
What I love about this video is that you poured your blood and sweat into these mini mango cakes and also trust me this recipe is making the world a better place even if you might not realize it

I made these dairy free and sugar free (I used substitutes) and half sphere molds and can I just say WOA! This was the perfect video t follow along to and they turned out absolutely incredible! Please let me know how long you freeze the gelee and the mango cake before glazing. And after glazing, can you store overnight before serving? Or only apply glaze just before serving? Thanks, very nice cake.

If the parchment paper doesn’t want to release the sponge, it helps to grease it lightly prior to pouring the batter. Also, a trick I learned for removing the paper: prior to peeling the parchment of the sponge, brush the top of it with water for an easier release. Hope it works for you too! ❤

If you don't have cake flour you can use regular flour and adding cornstarch for a similar texture, hope this helps😋

안녕하세요 무스케이크를 연습중인데 레시피없이 감으로만 하고있습니다. 제일문제가.. 무스를 몰드에 넣고 굳히는게 문제인데 젤라틴이 부족한건지 온도가 부족한건지 얼리는 시간이 부족한건지 냉동실에서 완전히 깡깡 얼지를 않아 꺼낼때 겉면이 자꾸 뭉개지는 현상이 일어납니다 뭐때문에 그럴지 조언좀 주시면 정말 감사하겠습니다 ㅜㅜ

very nice very simplificatino of a classic recipe that everyone is doing on youtube now but I suggest on the mouse layer todo more of a proper mouse and less of a whipped cream with chocolate, and mango puree as that will be a very airy very simply mouse, and that mouse can make or break the cake so making a proper mouse base, then whipping it introducing air bit by bit and having a complex flavor to it is what I would change but this is still amazing none the less
