I'm on the fence about this one. On principle, it's messed up to do something to someone that in any way physically affects them. But on the other hand, it's facial hair that can completely grow back and it kinda feels like he's one of those guys whose persona is 90% about his beard.

I agree, I've had a beard for over 10 years straight, half the time it's been at a length similar to his, and I would be P.I.S.S.E.D. if someone shaved my beard like that, I probably would stop talking to them for the entire time it took for it to grow back, just to teach them a lesson on how long it takes to grow something like that out.

If it had been me, I would most definitely have cut off her hair later. The fact that she did this to someone, she is basically approving of it being done to herself.
The sleep sneak makes me think there's more context than we're seeing (you need only land the briefest glancing blow with sheers to produce such an effect, which can be done in any unsuspecting instant) such that maybe the trimmer was (supposed to be) guarded or she at least meant to have it touch opposite the bladed side, have him wake up freaking out that she hit him with when she didn't. Except, she messed up and she _did_ get him. But if so, the lack of clarification makes the act appear as one of malice, not the joke-gone-wrong that it is.
