There are plenty of different ways to boil crawfish and here is mine!
Seasoning Mix for 1 sack (30-40lbs):
4 lbs of your favorite seafood boil seasoning mix
6 oz cajun seasoning+
3 oz onion powder
3 oz garlic powder
3 oz paprika
10-15 dried bay leaves
3 oz cayenne pepper or to taste
1/2 c salt or to taste

I’m doing a 150lb burl today. Let’s go baaaaaby. We use asparagus, mushrooms and broccoli in our boil too. The asparagus and broccoli pulls in so much flavor

I love that boiling pot with hinged basket. I'm old and don't do the big boils like when younger. I hate the dog-days of summer when crawfish are outta season. ....always get the tail meat, just look at the package to be sure they from Louisiana or Texas.
I definitely learned a lot and never really knew all the steps that went into making a good crawfish boil. Thank you so much for that step by step guide from beginning to end.

I still remember that we had got lots of huge crawfishes in the countryside in the 1990s . people even didn't eat them ,caught them and smashed to feed the poultry .Never thought they could sold at high price at today's restraunt and even formed a new industry all over the world

Fellow chef. Love what you're doing. Small suggestion.... Make sure you clean your celery. You spend all that time cleaning the Crawfish just to add the dirt on the celery stalks to the broth!! Otherwise, you're killing it my dude! Keep fighting the good fight!
I did the blender for all the onion, celery & garlic this year. Made a MUCH nicer presentation without all the onion flaps laying all over everything. I will not SWEAR that it tasted better, but I THINK it did. It sure did LOOK BETTER. Also, first time I did the two-pot-boil. I finally get to use that big ass aluminum pot I bought 20 years ago with a 2 pot boil... ( we still do a cold wash and sort in a kiddie pool, with 1/4" holes drilled in it. 20+ years for that little thing. Store it in the garage rafters, upside down.) Bugs came outta the shells easier. 1 time is NOT a result, but I'll be trying that for the next few years to see if that remains true... Gonna get my ass up to 3 or 4 soaking pots, 3 or 4 blankets to keep em at 150F, 1 boil pot (the Aluminum one mentioned, in plain water, after all the cleaning as said here... ) Maybe get DONE cooking in 1 hour? ENJOY eating WITH my friends, instead of at the end..... I DO juice my lemon/lime/etc, for the soak. Get a big SS juicer on Amaz, tell your friends they are weak. Fruits get juiced in about 15 seconds. Easy Peasy... Does anyone SOAK in Aluminum? All the acid started making me nervous YEARS ago, just like they say do NOT cook tomato sauce in Aluminum. Just FYI, I followed kzhead.info/sun/ddhyZqVtbmd4gY0/bejne.html this year. As Chef Alden says, do what you want. Watch a LOT of folks, learn from the old timers...
So I have a question, I see a lot of folks dump the juice/ gravy out and I think putting some in some canning jars would be so good in red beans and rice or whatever ya know.

A friend of mine makes craw fish with Maggi masala (a blend of Indian spices). See if you like it. You'll get that Maggi masala at any Asian / Indian store. Try a small batch first though. I love it.

Nice video! Is there a reason you add the citrus booster after you cut the fire, instead of below dumping the crawfish in? I wonder if the citrus booster would still dissolved even though the water is not as hot. Does it adds more flavor? Thanks.
Add the citrus after the boil, so the flavors do not evaporate.

We just used to use them as bait. That said, the tails are not bad, but I'd not have them by themselves. Grilled and used as a finished product or as part of a gumbo... yeah I could work with that.
