Campfire Cooking. Dutch Oven Bread with Bacon Wrapped Halloumi Cheese. Cast Iron Cooking.

In this video, Maggie and I head out to the woods to do a spot of campfire cooking.
After collecting firewood and lighting a fire to get a good bed of embers, I make a simple bread dough. After needing and proving the dough, I bake the loaf over the fire in my Dutch oven. To go with the loaf, I then pan fry some delicious smoked Halloumi cheese, wrapped in bacon - delicious!

Bread Recipe
1lb (450g) plain flour
1lb (450g) strong white bread flour
1oz (28g) sugar or honey
1oz (28g) dried yeast
1pt (568ml) warm water
1 tsp salt
Mix the sugar and yeast with half the water
Mix the flour and salt in a zip lock bag
Slowly mix in the yeast mixture followed by the remaining water
Mix in the bag
Kneed for 5 minutes
Put in a warm place to prove (double in size)
Kneed again
Shape into a loaf shape
Prove again
Bake 200 degrees C for 35-45 minutes
When the base sounds hollow when tapped, she’s done!

I was raised on old country music, not the stuff they call country today... I just bought an 8 quart cast iron Dutch oven. I've made bread for years at home...campfire cooking is another beast altogether...lol.

  • Just beautiful. I'm from the Caribbean and now I finally understand what my father used to say about baking outdoors long ago. He said there was fire above and below the oven and back then I had no idea what he meant. He also said it was the most delicious bread he had ever eaten. This actually looks like fun.

    • You have to try it out! Before working class people in Britain could afford stoves, they had a kind of Dutch Oven that fitted infront of a household fireplace and was heated from the back. I think industrial processes to make cast iron cheaply changed how we all cooked, but we've largely forgotten how now.

Now I'm learning a whole set of new skills from you about living off the grid in hurricane season in Florida.   • loved every minute. I do this once a week now in my backyard have a lot of property some of it is wooded and I have a little tree stump and a lot of cast iron. Very relaxing and I take my Bible and a blanket and I'm good to go. Love the bread. Love your dog

  • Hey Simon, what a great video this was! I like your gentle style very much. Also liking the small and practical (amount of) gear you're using. It's super efficient and your cooking site can stay as compact as needs be. You explain very well what you do and why that is.   • Well done Simon. Here in Australia we also have issues with finding places where you can camp without first obtaining permission. However, they would not be as restricted as over there I'm sure. Hopefully this COVID-19 issue will be eased soon and we can get out camping again.
