Potato is called “yang yu” in Yunnan. It’s found everywhere in our daily life, yet no one seems to pay special attention to it. Potato is the fifth most important staple crop in the world, second only to wheat, corn, rice and sorghum. As a staple food, it’s nutritious and satisfies hunger, having saved numerous lives in the world. As a vegetable, it’s versatile and delicious; it goes well with any seasonings and can be made into any dishes. Potato is deeply incorporated into the Yunnan people’s diet and life. It’s not only a food, but also something they love and part of a ritual of life.

  • It was amusing when Ahao started frying the potatoes it was still a bit bright outside then cut to him still frying when it was getting dark. Plus his complaint "I've fried them for a long time, how come they aren't still done yet?" 😂

    • the frying oil looked a little low.temp but still for.such small.potatoes, it would have taken 5 minutes.tops if he fried them in 2 batches. I too noticed the light change.from day to night

  • the potatoes grown in yunnan look interesting with different colours for the skin and flesh, albeit of the ones grown in the andes. the purple potato reminds me of the purple yam or taro and sweet potato that are commonly used in desserts.

  • In case anyone is wondering, zanthoxylum is basically sichuan peppercorn. I had to google it. There are at least eight species of zanthoxylum used for spice. Presumably, Penjie uses a local species, zanthoxylum acanthopodium perhaps? Wikipedia says it's similar to sichuan pepper, but more lemony.

    • Zan shui La is a general name for very spicy chills in Yunnan, Guizhou, Sichuan in South West of China. We have different types of chill peppers there. Some of them can be so hot that you just dip one chill in the boiling soup, then take it out after 30 sec, and the whole pot of soup will be very spicy. Zan Shui means dipping source, and La means chills and spices in the dipping source.
