Stephanie, you said you are squeamish when Marie pulls out a traditional mandolin. I too like the traditional design so I put a Kevlar glove in my hand. you can find them in many big kitchen stores, knife shops or butchers equipment stores. Many a butcher still has all of her/his fingers because of these gloves. I can't say they will protect your hands if you're using electric slicers and such but they will definitely protect your digits when cutting by hand.

Ruby chocolate is the fourth type of chocolate (the others are dark, milk and white) that was recently created by Barry Callebaut! It comes from ruby cocoa beans and is super fruit forward despite having no additives, it's completely from the cocoa bean! I knew someone who worked for Barry Callebaut when it launched and got to try it and it was really good if you like fruit and chocolate combined
Yes we had a shop in this small town in Alaska that introduced me to Ruby chocolate. It was a truffle shop which now has gone out of business.

You might want to use brush to brush on the chocolate to the molds. I purchased a natural brush at the hardware store, about a inch wide which is the perfect size to fit inside the mold. Much cleaner and much less waste of chocolate. ❤

Ruby chocolate is made from "ruby cacao beans" by Callebaut. So, just a different kind of cacao, though it might be fermented differently and be standard beans.

Ummmm....Stephanie......you are supposed to use a pantry brush to paint the sides and bottom of the chocolate mold! With the amount of chocolate you melted, if you had used a pastry brush, you would produce 3 to 4 times the amount of chocolate molds instead of just one Trey full. From one pastry chef to another, this is how you do it. Also, it's less messy less waste.😂

I love the Beatrix Potter embroidery, it was so cute. The leg of lamb looked delicious and that mandolin absolutely hilarious. Wish I had had one in the 70's, wouldn't have chopped the top of my finger off! Fortunately I stuck it back on and it mended, so I was lucky. 😄

I love that 3/4 of the table is beautifully laid and the other 1/4 is with the brother working hard at decorating Easter bunnies on the napkins! Real life at its best! ❤❤❤

If she gets a standard mandolin, definitely get cut gloves. I nearly sliced off the tip of my thumb, and it took ages to heal. Accidents can happen. I have very experienced hands too... it only takes one slip... having others distract you... someone bumping into you... the list goes on.
I'm pretty sure there already is a pair of the gloves in the kitchen. I remember seeing them once when they were talking about the contents of the big pantry cupboard by the door.

for the layered chocolates uou could use a paint brush to paint the chocolate into the moulds.
my good lady, i know exactly what you are doing here, and ive seen some chef's just put a ring of dough around the outside of the pot, and squish down the lid to get the seal. at that point if you want you can also push the dough back around the pot to for a more air tight seal.............
I really like the bunny embroidery patterns you chose for the napkins. I do remember the pandemic days of isolation at the chateau and how your lives were slower with fewer people and cozy dinners.
If you used a small pastry brush, you may be able coat the molds much easier…. Coats one and two….😊
Your rooms will heat up so much quicker if you get the heat operated fans that sit on top of the fireplaces. Wow that dinner looks delicious. Omg napkins are so sweet. ❤to all

OMG that stool in front of the wood burner for little Lancelot! 🥰 Seeing him and Poupette together in puppy love is the most adorable thing! What a vlog for the senses today! Slow cooked lamb in wine and garlic is the loveliest most frangrant thing, and those bouquets were fantastic spingtime sprays, and the napkins very sweet. I'm not as crazy about transferware china as you guys but far, but that Lomonosov tea set I've always liked, I might have to get one at auction at some point. @@Motherhubbard170 white asparagus is the same as green asparagus but is covered over and deprived of light as it's sprouting up to prevent greening. IMO it tastes the same, though some people say it has a more delicate flavor.

Marie, I made the lamb like that yesterday (using a bottle of Graves we forgot about over many years). I did mine in my big iron oval pot in the oven (set on static to avoid too much evaporation) and it was fabulous. Husband was very happy. So tender and flavoursome. That recipe is a definite keeper. Lovey preparations for Easter. X

The last couple days we had approximately 10 inches bur march will soon come to an end and 🎉April showrs and MAY flowers will begin to bloom.
