On your website, you have a basic pasta dough recipe that calls for 600g flour and 12 egg yolks. This recipe calls for 400g flour, 12 egg yolks, a dash of water and a drizzle of olive oil. This is not pasta. It's not hard to imagine why most of your restaurants have closed for business.
Maybe he said it wrong in the video and instead of 600 he said 400 It's simple mistake in his words you don't have to be harsh on him And i guess that he put 600 otherwise the egg yolks would've been so much
the proportion are okay. Basic pasta is a thing, ravioli is another... you need more yolks because is a filled pasta, needs to be slightly harder otherwise it will open while is cooking
