  • For the life of me, I couldnt figure out where this guy was going! And I am a cabinet maker for the last 54 years. For the love of Mike, it seems people today MUST make even what should be a simple task, over complicated to the enth degree! Take a deep breath, sit down, and quite simply....learn how to sharpen a knife the traditional way, and once learned, you will have it for life.

    • I soo agree with your sentiment. I just pissed away 8 minutes watching a video that proclaims to sharpen in 3 minutes. (DUH, ME!)...My grandfather was an old German butcher who taught me how to sharpen knives and every darned thing else. His knives were so sharp you could shave a gnats arse... These kinds of videos need to come with a SCHMUCK warning...I'm getting old too soon, smart too late...At best , this video was done with good intentions. (I hope)

    • Agreed. But I do like the using of vinegar and baking soda to clean the rust and the polish. But I prefer sharpening my expensive Japanese knives with my trusty whet stones.

    • @@johnduffy6546 So many KZhead videos are simply rabbit holes that waste your time. Fortunately for me I spent more time writing this reply than watching the video. I have learned to use the fast forward slider and actually try to avoid those tempting images they suck you in with (I failed and clicked on this one). Anytime you see one of those cryptic weird images that just don't make sense, you can bet the actual video is not going to match up with what you thought you were clicking on. The vast majority of what I see on the right side on my monitor right now is BS clickbait. This place can be a huge time suck from your life.

  • After sharpening the knife would have had a large burr. It was obviously removed before the sharpness demo. As it's an important part of the process, the burr removal should have been show.

  • What about the folded sandpaper on the thumbnail? Show us how you sharpen with it. Also the knife was sharpened on one side,why? Isn't there a burr on the opposite side when you sharpen the blade?

    • The knife was sharpened on one side because it uses a chisel grind. Personally I don't get the appeal, but most of my knives are western style knives. Chisel grinds are very popular among Japanese kitchen knives and Japanese utility knives. As for the burr on the opposite side. Yes. You do get a burr on the opposite side, but you would normally remove that by flattening the back side and/or a by stropping. Though depending on how much metal was removed it might not have been an issue the first time the knife was sharpened.

  • This is for those with zero skill in knife sharpening... there are similar devices available commercially, but I still prefer to sharpen my knives manually on different grades of stone under running water to a mirror finish and razor-sharp edge... it takes time and patience, but the satisfaction is unparalleled.

  • I bought a Drill Doctor many years ago and was very pleased with its performance, but the plastic depth stop to set the flutes broke and when I tried to buy another the style had changed to two fingers in the flutes and were hard to set right. The one you just tested went back to the original method of setting the depth of the drill in the holder. I may have to buy another one soon. LOL

  • What purpose does the baking soda serve? The vinegar will remove rust without it. Adding the baking soda only neutralizes the acid in the vinegar. The acid is what loosens the rust. Baking soda only slows the process.

    • Came here for this comment. The baking soda makes the fizzy bubbles, but enhances the process in absolutely no way other than that.

    • It makes an effective cleaning 'paste'. This paste adheres to the surface and aids the cleaning process.

  • Whenever I sharpen a knife, it never takes more than a minute, ok kitchen knives. This took a took a tad too long and I would really question why anyone would do this.

  • More like 5 hours of work just to sharpen a knife. Easier way is turn on your stove fire up and heat the knife up for 3 minutes and file it down for 1 minute. Do both sides and then use the smooth sandpaper to buff it up. Easy peasy! 8:39

    • Terrible idea...since you ruined the heat treat your knife will dull faster from then on. Just learn how to sharpen with stones.

    • The time is making the knife holder. A one of project guarantee to sharpen at the correct angle. You can't guarantee to only stay on the edge on your method

  • After a working life of 54 years during which I used a knife every day for minimum of 10 hours a day, I have used many ways of keeping them sharp, if I had the opportunity to have tried this method I would have . Retaining the sharpness of a blade is the premier skill of being able to work with one.

  • These types of guided sharpening systems/machines are popular and readily available. You took the time to make your own which is cool. Don’t worry about the complaining old men. You did good and it’s better than trying on a stone without the skill and ruining your knife (until you get the skill). Good video.

  • Also you could replace cable tensioner with another wood for a fixed angle and use a stone to sharpen on that angle.

  • Great Idea !! But why did you use a welding rod for the guide, and not just a round steel rod or pipe? And why the turnbuckle? Why not just thread the eye bolt directly into the wood base?

  • My grandfather was a butcher and he left me some of his knives but I've never seen one with only one edge. What is it used for? Also if you treated the blade with vinegar and baking soda another time would it get rid of more of the staining? I never saw that trick before.

    • Normally, Japanese knives usually have 1 blade. To remove more, you should soak them longer

    • That knife only has one blade, if your knife has two blades, turn it over to sharpen.

  • Toll und was ist mit dem Grad auf der 2. Seite ? Beim schärfen zieht man abwechseln beide Seiten ab , der dabei entstehende Grad hebt sich dann als feiner Metallspan ab . Alles andere ist Pfusch .

    • ​@@creationholic101 Die meisten Messer haben nur eine Klinge ! Hier geht es um die Schneidfase ! Auch wenn ein Messer nur eine Fase hat muß man die andere Seite abziehen , sonst verhindert der Grat das das Messer gut schneidet . Dabei legt man das Messer mit der glatten Seite auf einen feinen Abziehstein und poliert die Spiegelfläche !

  • Genius. In the time it took me to watch someone to make a home made Lansky. I could have went down to my shop and sharpened many knives. A knockoff Lansky is $22 on ebay my time is worth something.
