FreezeDryer: Making Onion Powder

In this video you'll learn how to make freeze dried Onion Powder for food storage and cooking.
It takes about 20-25 lbs of onions and 46-55 hours in the medium Harvest Right freeze dryer depending on how heavy you load it.
If any onions do not completely dry out, you can put them in the oven a cookie sheet at 150-175°F for an hour.
Some ovens nowadays will not go lower than 175°F so watch your onions carefully.
Be sure to wear rubber gloves as the allicin in the onions penetrates your skin and you'll smell like onions for part of the day or night.
Onions have sugar in them so be sure to dry them thoroughly and to use oxygen packets and silicone moisture packets when you store them for short or long term storage. This will keep the moisture out and prevent your powder from going black.
I use the moisture packets in EVERY pouch I put freeze dried products in as they absorb any moisture left over and prevent the product/food from spoiling while it is stored.

  • Interesting you could dry frozen onions! That was a lot of water!!! Great way to save a crop. Yes, the aroma of onions are intense!!! So sad when you lose a veggie you worked all season on. Glad you were able to save yours. I sun dry tomatoes. Out of a 22# box, I get a half gallon jar. Thank you for this interesting video. 💞

    • We do sun dried tomatoes in the dehydrator, then for good measure I run them through the freeze dryer to make sure ALL of the moisture is gone, then mylar bag'em for long term storage... We grow a LOT of tomatoes so we get about 3 gallons of finished product every summer and it's gone in a flash... seems to be one of the most tasty chip snacks we have!!     • Absolutely! We do all of our HOT peppers into powder in the dehydrator... I just needed to do these into powder because they were already frozen and if you thaw onions, they turn to MUSH!! So freeze drying was my only option to save them. Thanks for the GREAT question. Good Luck
