    • During my PhD (they work a bit differently in the UK to in most countries, as I understand it, as you _just_ do research and then wrap up by writing your thesis), _every_ other member of my research group of 12-15 people, depending on the year, was Chinese and, while their English was always excellent considering they were only in the UK for the duration of the PhD, their grammar would and syntax when speaking would be very different from formal English in a pretty consistent way... ...and you'd be shocked how quickly I found myself talking the same way while I was in the office, initially without even realising I was doing it. It honestly made communication super-easy because it meant I wouldn't slip into my usual Northern Irish colloquialisms, which even the most thorough English class are unlikely to teach.

  • In a previous restaurant i worked we would cooked Chicken Breast by vacuum seal chinese rice wine & dark soy sauce via steam/sous vide method -> allow to cool & reopen for later use. Reheat via roast & finish off by frying the skin so it has a nice crackle. The rice we would cook with both chicken stock and duck fat.

  • I had this in Penang and it was absolutely delicious, from a place that served only this one dish. The sort of place you walk in and they give you chicken and rice automatically. I had no Idea that this was Hainan chicken rice, so basically I'm really glad you did this wijio. I'm going to try to cook this soon. I did try coming back from Penang but complete failure without a recipe.

  • Chicken rice is a platform for some of the best dipping sauces in Asia. You need the chilli sauce they have there plus dark soy mixed with crushed ginger. The dip the chicken in both, spoon a bit on your rice, eat the cucumber to cool down your mouth. Perfect weekend lunch in Singapore after morning tennis or a group bike ride.

  • Just because youtube commenters often get the joke, he's just kidding about the free-range chicken. Give the chickens a good life and they will taste better. In Vancouver, a Southeast Asian-influenced restaurant always used free range chickens and they were not as chubby (because they run around), but they were also very yellow. Great flavour. Weird that the Sorted free-range chicken was so round. I'm used to them being leaner looking. Oh well.

    • Free-range chicken refers to a particular chicken breed found in Malaysia, known as kampong (village) chicken. They used to be free range (running around the villages), and are still farmed in a way that lets them run around. You're right that they're very yellow and the drumsticks are very long and sleek.

    • Its got more to do with what you feed them, free range chicken should in theory have a far more varied diet which will also include a high amount of insects and bugs. Its the added proteins that give it the better flavour
