Easy Camping Breakfast - Bacon Egg and Ham Waffle Bake

Easy Camping Breakfast Recipe: Bacon and Ham Waffle Bake
6 slices thick cut bacon, chopped into bite sized pieces
1 stick butter, melted (divided)
5-6 frozen waffles, slightly thawed
6 eggs
¼ cup mayonnaise
1 ½ cups heavy cream (divided)
Salt and pepper, to taste
1 cup diced ham
2 (2.75 oz) packets gravy mix
1 cup water
-Cook the bacon until about half to ¾ done. Place on a paper towel and set aside.
-Pour half of the butter in the bottom of a 12-inch skillet or Dutch oven. Tear the waffles in large pieces and place in the bottom of the skillet/Dutch oven to create a single layer. Pour the remaining butter on top of the waffles. Set aside.
-In a small mixing bowl, whisk together the eggs, mayonnaise and ½ cup of cream. Salt and pepper, to taste.
-Evenly top the waffles with the bacon and ham. Pour the egg mixture over the waffles.
-In a small bowl mix together the gravy packets, water and remaining 1 cup of heavy cream until smooth. Pour over the waffle casserole.
-If cooking indoors, bake at 350 degrees F for about 25 minutes, or until it springs back to the touch and is lightly browned.

  • EXCELLENT! I just cooked this for 11 campers who would be on the river all day. I have a reputation for being a very capable camp cook but THIS one got me seriously rave reviews! Light and fluffy, filling and very flavorful. A very nice change from a traditional thick, heavy "egg bake" type breakfast. I used a combination of sausage, ham & bacon. Took about 25-30 minutes to cook in a standard 12" dutch oven. (an extra 5 minutes to really crisp up the top) Will DEFINITELY be making this recipe again (by crowd request). Next time I'm making two though!

  • This was my first recipe of yours that I tried. We were camping recently in 30 degree weather in Big Bend Ranch State Park. It fed 5 hungry 20ish year olds and my 60 year old butt with a hot, filling and FUN breakfast that made standing around the fire and watching that 12" oven on a cold morning a special time with my kids. Thanks for warming the hearts and bellies. Next time, I'm going to add some salsa to top it off... This IS Texas! ;-)

Also, I say thank you for your gratitude to your service men and women. I am one too, here in Australia, I started as a reserve infantry soldier, then changed to Air Force as an avionics technician type. I have served for nearly 29 years now, and I feel deeply moved when anyone has any respect or appreciation for the work that we do. I do not think many people realise the military today spends a significant amount of our time on humanitarian missions, food supply, disaster relief, also rescuing people in danger. We join to serve our country. Mine is Australia, but we are allies, the USA is our best friend here. Kent and Shan, God bless you both.

  • I'm a bit late commenting, but a while back I taught a Basic Adult Leader Outdoor Orientation (BALOO) course to a group of about 25 new scout leaders. On the second morning, I showed this video and then broke the class into groups, having them all make some as a way to feed everyone and to satisfy the outdoor cooking part of the class. We ended up going through 6 Dutch ovens full that morning with no leftovers....so I'd call it a win! (We also made your cowboy coffee). Thank you for sharing all your wonderful recipes. I make lots of them on campouts.

  • I sure do enjoy your videos. I found this one a week after Easter, I have never commented on a KZhead video before, but Kent, your story touched my heart. As a Midwest farm boy I've had dreams of the cowboys ways, as a truck driver running all over out west I've gained a huge respect for the people who risked it all to settle such a rugged land.   • I just revived your cookbook. you didn't warn me of the lack of sleep it will cause. aside from the wonderful recipe you have listed, I loved your stories so much I couldn't put the book down. I just love the old cowboy ways, and life style. I was reading the recipe for your meatballs. A thought for you to maybe try. I like to add mozzarella cheese to the mixture , the cheese makes the meatballs so moist. God bless, you and Thank you both for the great cookbook and stories.   • I have tried a few recipes from this channel and most came out really good, except the caveman steak I burn that one so bad even the dog didn't want it. This channel is the reason I got a cast iron skillet and all of their recipes work in them both at home and camping. Now I don't plan to get a burning hot box because I going get one as an in-law soon enough but the way you two show how to cook is perfect for camping and needs just a little twirl to cook in the kitchen. Look forward to more videos!
