  • Mr. Rollins I had the tremendous pleasure of meeting you downrange at Ft. Carson CO back in 2003. Everyone, Kent is genuine just as you see him. He was kind enough to give me the leftover cherry peach cobbler when he put away the food. He is an amazing cook and it was an experience to stand right there see his wagon and how he prepared our meal. I just retired from that Fire Dept and I tip my helmet to you sir. May the Lord above continue to richly bless you.

  • Learned though necessity: I was out of cream on Saturday morning & had promised breakfast to my wife & daughter. I didn't want to run to the grocery store. I looked in the fridge & noticed I had sour cream. I thought, I would give it a try. I added about 3 tablespoons for 8 eggs. I used an emulsion (stick) blender & whipped them up. They were amazing. To this day it is the only way I make my scrambled eggs or omelet batter. I attribute it to a combination of the enzymes in the sour cream & the air incorporated by the emulsion blender. Give it a try, you will be amazed

  • I watched an episode of America's Test Kitchen (TM) and the woman, who was an experienced pastry chef, advised that 88 stokes of the whisk or fork will break down the protein strands giving you the best scrambled eggs. I've tried it and have continued to use it oh these many years. It works!

  • He gets me every time. Eggs for dinner. There's just something about the way he makes food look so dang delicious that I run out and get the ingredients and try it right away. Thanks to Kent and Shannon I've completely changed up the usual dishes we go through every month. My husband thanks you Kent LOL. He says he owes you a steak dinner next time you both get to Houston. You've given him back so many dishes his grandmother used to make. She ran the only restaurant in Cedar Vale, Kansas and you're bringing back all of those dishes that he would eat when he got in from basketball or football. He'd sit down at the counter and his Gram would fill him up because he was a growing kid and was starving after school. His divorced Mom was an EMT and worked double shifts so Gram Slaughter filled the bill. Thanks Kent and Shannon. Hope you're both doing great.

    • After years of hearing others y'all about it, I coughed up the money for it. Will not use anything other. Well, I do use Ghee sometimes but butter Nope. We live hand to mouth but we buy a pack of salted one week and unsalted the next. We are never without it now. LOL Kinda makes ya think folks The taste is better because it's made the way things USED to be made. And we wonder why so many of us are sick these days????? I'm not into clean eating, but all that crap they fill "food" with these days?? No wonder it takes weeks to get in to see a Dr.

  • That water trick works like a charm. The bubbling from the water is gentle enough not to break the egg but just enough agitation to free them up. I love my cast iron skillet now that I can cook it in well.

  • Very similar to how my grandma taught me for the scramble, it absolutely makes a difference if you give just a little bit of love and care to those eggs. I do like some chives and a little dash of a good hot sauce in there, but that's personal taste. One thing I think is good to point out is to take the scramble off the heat when it still seems to loose, the heat from the skillet will keep cooking it and it even cooks on the plate until the temperature drops, so if you keep it on the heat until it looks perfect, it'll be dry by the time you eat it.   • That's how I like 'em! Heat management is the key. Too many restaurants cook scrambled eggs/omelettes that are scorched brown on the outside, and either overcooked or uncooked on the inside. Their skillet is too hot. Yours was just right. Great video as always, thanks and take care.

  • Your scrambled eggs are pretty much the way I usually make mine. Lately though I've had some leftover mascarpone cheese after making tiramisu. Added a tablespoon or so of that in. It works very well!

This makes me feel like a giant in a hobbit hole trying to whip up foamy cheese, so to speak. Boy I feel basic, but that don't mean I won't learn more. Cooking has NO limits, and can't wait to see the next dish next week. P.S. This was uploaded on my dad's birthday today, and can't wait to try after today to cook this for him as a post birthday breakfast. Keep on sizzling, I'm not going anywhere friend. 😁

  • This is the first time I have viewed Cowboy Kent Rollins. I definitely will be signing up for his emails. Living in Houston, Cowboy Kent so reminds me of Dr. Red Duke back in the day. Both of these men use(d) language (whether it be cooking or medical) you could understand and follow along. Looking forward to all those southern recipes to come.
