    • Exactly. Let me tell you about a Luxemburg restaurant, my girlfriend and I found. We had done a hike, got lost a bit, and when we got back to the car, we were hungry. First restaurant we saw, we pulled over. It was a bar, seventies look, it also had a fancy restaurant, but that was closed. Sunday. All we could get was a simple sallad. Never had such a great sallad based meal. Believe me, we saw slices of tomato, black beans, some bacon, some cucumber. And bread. Nothing special. But the combination was excellent, taste it and you won't believe it was that good! That female cook had done a miracle. She was Michelin levels and suddenly you know some cooks are great. They really are! Good vegetables, good spices, fresh fish, everything was good, and that can astonish you, never had such a great sallad before. Do remember that, and do go to a real expensive restaurant at least once, for I do hope you will get such a surprise, yourself. Like, huh, how did they do that? It was fantastic, it really was. Do you know that book called Blue Roads? The writer did a camper tour across the entire US, and he wrote about local food and local folks restaurants. Same idea, he often was hugely surprised by the simple but excellent food he got served. These restaurants are being killed by money-money-money-culture. So, whenever you get the chance to eat the oldfashioned way, well, switch on your entire IQ and do it. Before you are too late. Got the idea?

But your karjalanpiirakka, makkara, senappi (finish pirogis, sausage, mustard) is not bad either. I especially like that cucumber and mustard mix you have over there- :D

  • My sister lost her husband suddenly in October this year. Her grown daughters live out of state, and although she has lots of friends, she is now on her own. As kids we loved to help our Dad, a WWII Navy chef, cook at home. My sister sees me post some of Kent's recipes from time to time and she always wanted to try some on my cooking. Since her husband's passing, we've spent a lot more time with her, and she is up staying with us for the Holidays. She arrived last evening and this morning she awoke to the smell of coffee and this Mountain Man Casserole in the oven. Other relatives are here, and exactly what Kent talks about happened like magic. Yes, there were raves and OMG about the dish - seconds (and thirds) all around. But in between bites, there was talk and tears and laughs and hugs of memories of her late husband and Christmases past as kids when we helped our Dad with food too. Talk about HEALING. Kent Rollins HUGS all around the table. We lingered, finished the coffee, and cleaned that casserole dish totally. And stayed and talked forever. My sister tearfully said "this is worth a million dollars worth of therapy, thank you." The we raised our coffee cups in a toast - to Kent Rollins. Thank you Mr. Rollins. (They scrolled through your other videos and now we are going to cook tonight together, like we did as kids. She wants Hamburger Helper, your awesome recipe.) God Bless!

Spending time with loved ones is what really matters, and cooking with and for people is a great way to share fun and love and laughter - and healing. Thanks for the kind words.

  • I decided to give it a try and "Oh Boy". Now every Saturday morning my whole family is looking at me like:" Aren't you going to make that great Mountain Man Breakfast? Again?". After first try my kids were talking about MMB everyday for two weeks! Quick and easy to make, makes everyone full for the whole day! My change to the recipe is that I am adding brown sugar glazed bacon on top. Thank you Kent and Shanon for improving my family's breakfast time!

  • My late uncle took me on a hunt in Montana years ago and the outfitter's cook did something very similar to this each morning. The first day I was almost in a food coma afterwards, but we worked ourselves up to it as the week went on :) Many thanks for bringing back such happy memories.   • At 56, I have tried to cook most of my life. The only humans that can eat my food are myself (most of the time) and my Kids (when they where kids). Mr. Rollins has changed my culinary life! Just made his chicken n dumplings.... My own wife did not believe I cooked them. Thank you Mr. Rollins

  • This man is a godsend and a treasure! Sometimes I'm out in the brush and country for weeks at a time and his recipes are easy, filling and importantly nourishing! Some of them I've been able to cook and eat in rain, snow and all sorts. Watching these videos I always learn something. He's like the world's grandpa:)

But having to move every 14 days to a different spot, or different National Forest or BLM (that's Bureau of Land Management to clarify) gets old after a while. Fortunately I bought land in rural country several years ago that is now my home. Don't have to worry about getting kicked out by anyone anymore. And I don't have to deal with any stuck up snobby Home Owners Associations either. I highly recommend you find property ASAP. Even if it's not in the most scenic of areas. Having land gives you something to fall back upon. There are still some nice cheap lands out there.

  • thanks for bringing back some memories. I lived with my grandma for 8 years and she cooked and headed most of the house on a wood and coal stove. My job as a boy was to keep the wood and coal stocked. she was the best cook I know. and the last pioneer in the family. Thanks so much kent.

  • I've done a lot of cooking in my life and roasted a lot of peppers. I also use leftover plastic shopping bags to steam the peppers in but I never thought to actually use the bag to help me take the skin off. Brilliant! Goes to show that no matter how much you have done something, somebody out there has done it a little bit differently and maybe, a little bit better. In anyways, it is different and that's what makes it fun for me.

  • That's a hearty meal at ANY altitude! Up in the mountains, on the plains, working cattle, bringing in the crops at harvest time...or simply camping with family. I've made a variation of this over the years, though never with a poblano pepper...that needs to change. Bless you and the family, Cookie....catch ya at trails end.

  • When my kids were little thru early teens id make breakfast like this..it was always a hot homemade breakfast. I agree completely that a hot homemade breakfast does so much more for you physically and mentally over the cold, quick sugary garbage labeled breakfast. My kids loved it & so did us parents.

  • Kent, I don't usually eat breakfast, but my wife does. Something about me being retired, and her still working, so it's all good (love being a "kept" man!) But she always wants me to buy that frozen potato hash browns. Thank you once again, I need to reduce the recipe to make it just for my wife and me this weekend, but cooking is forgiving when you have the basic concepts down! I even have a small cast iron skillet (but alas, no Bertha) that I can make it in. And it'll be on a stove. My dog might burn his feet if I built a fire in our back yard. Good dog, but not a lick of sense!

  • I make something pretty similar in my cast iron skillet. Additionally, I'm a very firm believer that there is no such thing as "breakfast food," and that eggs, bacon, and all that other goodness is excellent at any time of day, especially considering I had worked all 3 shifts during my time wrenching on C-130s in the Air Force. Been really enjoying your channel so far, and I love how down to earth you are and how genuine your words come across. Keep on keepin' on!

    • @@adham1200, tell you what. A good plate of huevos rancheros is hard to beat. Mexican breakfast plate: fried eggs covered in Mexican rancheros sauce, refried beans, cubed fried potatoes, bacon and flour tortillas. Cold beer is mandatory also in my opinion. Simple plate, but if done right, I’ll put it up against any other breakfast.

  • Thank you for this recipe! It may seem strange, but I actually made this because I needed a simple, but filling meal after recovering from stomach flu! I used half of the amount of sausage and no bacon. Added no seasonings too. The final result was perfect tho. It's enough calories to help me feel satisfied and full, but simple enough for my stomach to not get upset. I made it on a 12" cast iron skillet and used 3 red potatoes and 2 yellow potatoes. The towel trick to squeeze out the liquid made the perfect shredded potatoes texture too. I'll def make this again following the actual recipe!
