Hi Gemma, just want to give you a heads up before some ill meaning people would point out. 5 years ago, Tasty posted a similar recipe, the only difference is they used a cinnamon roll pre packaged item. I have never wasted so much time and money, I waited to make this because I didn't have Instant Yeast as I have never used instant before. They never raised the 2nd time, after cutting them and putting them in the pan. I will never use Instant ever again, and it was brand new expiration was 2023. I tried to bake them as they were but in 40 mins they were approaching charcoal color. I have been following for at least 2 years and have made other things from your site. I am a very good baker and supply my neighbors with baked goods all the time. I had planned on supplying my one neighbor with rolls tomorrow as their daughter was in from out of town. Thankfully I didn't say anything ahead of time. I make my mother's 200 year old Cinnamon Rolls all the time and just wanted to try something new. Oh well, Nothing against you for sure. Best Wishes

Hi Gemma I have been doing cinnamon roll monkey bread in this type about three years ago, it’s absolutely delicious. The difference between mine that i make the rolls smaller or some times i make them in regular size then i cut each roll in two half. Anyway, ( a delicious rich dough with good amount of butter, brown sugar and cinnamon combined with cream cheese goodness or gooey caramely salty sauce ) just count me in ! I will never stop trying a new shape and technique for this combination!

This looks sooo yummy! I have a question about the proving of the dough. You said that the dough is ready when you poke it and it doesn't spring back, but with some recipes that means the dough is over proved. How can you tell the difference between the doughs? I've had doughs that sprung back but somehow didn't turn out right, but also doughs that didn't spring back and also didn't turn out right. Also of course doughs that worked great. So I'm slightly confused right now, as I thought springing back was the way to tell if it was ready or not.
Hi. You will know the dough is ready when you lightly press and finger indent doesn’t spring back right away, then it’s ready for the next step. If it stings back right away, it needs more work.

My mother in law has a similar recipe that has the same outcome. But instead of caramel she does a box of butterscotch pudding(not instant) pre packaged rolls, and lots of walnuts.

Hello, I tried this out yesterday. I made the dough and assembled it yesterday and baked it today in the morning. When it was fresh out of the oven it was very soft but after a 30 minutes or so my cinnamon rolls started to become hard what did I do wrong? How can I fix it? It was very yummy btw
Hi Isra. Which one hardened, did you mean the bread or the caramel? If it’s the bread, then that might have been a proofing issue, over or underproofing causes it. You will know when the dough is ready, lightly press the dough and if the indentation springs back right away, then it’s not ready. As to the caramel, it might be a case of overcooking. You can reheat right before serving, if it’s just the caramel hardening. Hope this helps.

My great grandma made monkey bread this way (my dad was born in 1921 so I’m sure you can imagine how long this has been done) I promise you that this isn’t an idea that came into fruition in the test kitchen😂😂 looks great though

Sorry to message again but could you help me with one more thing? So I tried Bakehouse Basement's 'syn free Tagliatelle with creamy steak and mushroom sauce' recipe. For the sauce I had to combine 2 eggs, 1 tbsp yoghurt and seasoning. Second time round I will be doubling my ingredients fyi. Again I'd rather not use eggs. As it's not baking related I'm guessing the buttermilk and baking powder combo won't be appropriate. Do you know what else I could add that won't affect the texture of the sauce?
Savory is not my expertise, but I’ll give it a try. If you are referring to the sauce, the eggs function as a thickener. You can try a little cornstarch with the yoghurt and seasoning, add a little cream. Generally, baking powder in baking goes with any liquid. Baking soda is activated by an acid, like buttermilk, yogurt, sour cream. I don’t recommend baking powder in sauce as it’s a raising agent and would have no place in sauce. Hope this helps.

Hi Gemma , hope your doing well :) I came across this recipe when I was craving something cinnamon-y but not actually Cinnamon rolls ... so I really wanted to try this since I also had all the ingredients at home : I’m at dough process now ... but unfortunately I have a problem : it’s been one hour and 30 minutes and my dough hasn’t risen up ... which makes me kinda upset because I don’t wanna waste it ... I even checked twice I added all the ingredients correctly - with measurements ... but I don’t know what is the problem ... if anyone is reading this ... please help a girl out 😭
Hi. Is your yeast to date? Also, if using dry active yeast, you need to bloom it in warm water, not hot water. If using instant yeast, add it directly to the dry ingredients but do not place it over salt. When proofing, proof in a room that is warm. Make sure it is covered securely so as not to let any air in.
