Broccoli, potato and carrot. The easiest soup I ever made!
If you have broccoli, potato and carrot at home, try to make this delicious soup. It's very easy and fast to make.
Ingredients:
100g broccoli
1 carrot
3 (200g) potatoes
1 onion
3 cloves garlic
600ml vegetable broth
olive oil
salt
pepper
garnish :
spring onion
Instruction:
- slice carrots.
- cut potatoes into cubes.
- chop onion and garlic.
- heat olive oil in a soup pot.
- saute onion, garlic and carrot.
- pour vegetable broth.
- add cubed potatoes.
- cook for 10 minutes.
- add broccoli.
- cook another 5 minutes.
- take some of the potato pieces. Add some water.
- blend until smooth.
- pour back into the soup pot.
- season with salt and pepper.
- garnish with sliced spring onion.
- enjoy your soup.
