100-Hour Fudgy Brownies

I rarely make brownies, but when I do, I like to spend lots of time on them! Espresso infused brown butter, two kinds of chocolate, fluffy whipped sugar, and cold brew make them intensely rich and extremely fudgy. Even though the entire process takes 100 hours, I think it's worth it!

INGREDIENTS
2 sticks unsalted butter (225g)
1 tbsp espresso powder (6g)
Coffee ice cube (30g)
4 eggs
1 tbsp vanilla paste (15g)
2 1/4 cups white sugar (450g)
1/2 cup dutch-processed cocoa powder (45g)
1 tbsp espresso powder (6g)
1 tbsp kosher salt (9g)
8 oz melted 75% cacao chocolate (225g)
1 1/2 cup all-purpose flour (215g)
3.5 oz chopped milk chocolate (100g)
3.5 oz chopped 75% cacao chocolate (100g)
6 oz chopped 75% cacao chocolate, for topping (170g)
Baked in a 9x13 pan.
Note from me:
The 100 hours actually makes quite a huge difference in the end. Out of curiosity, I've actually baked off a batch immediately to compare to the 100-hour batch, and it's not nearly as delicious to me. It's kinda like watching a movie in 480p while your friends watch it in 4K - still good but could probably be a lot better.

    • @@thegreaser not necessarily improvements but enhancements and tweaks to my own personal taste. Use Lindor milk choc and Lindt 90% dark in the wet mix and then same choc again in the filling. Also, a little less coffee. We have a bean to cup coffee machine so all my espresso ice cubes are from that. Salted butter also browns up nicer than unsalted and gives a more caramel note after the process. Have you tried Alvin's recipe?

  • The three day rest and the freezer/fridge rest are so worth it. I’ve made this recipe a few times with varying degrees of self control and the full 100 hours makes a worthwhile difference.

    • @@gguktae3502 Not at all! I've made this a couple of times. The first time, I only put in the recommended amount of the coffee, and you basically couldn't taste it. It just made the chocolate flavour really strong. The next few times I've made it (I've made it like 5 times now lol), I upped the coffee by a lot, so you can taste it pretty strongly, and omg it's to DIE FOR.

  • Recipe so you don't have to memorize it INGREDIENTS 2 sticks unsalted butter (225g) 1 tbsp espresso powder (6g) Coffee ice cube (30g) 4 eggs 1 tbsp vanilla paste (15g) 2 1/4 cups white sugar (450g) 1/2 cup dutch-processed cocoa powder (45g) 1 tbsp espresso powder (6g) 1 tbsp kosher salt (9g) 8 oz melted 75% cacao chocolate (225g) 1 1/2 cup all-purpose flour (215g) 3.5 oz chopped milk chocolate (100g) 3.5 oz chopped 75% cacao chocolate (100g) 6 oz chopped 75% cacao chocolate, for topping (170g) Method: 1. First Brown the butter over medium-high heat till golden brown bits pop up on the bottom. 2. Take the butter off the heat and add in espresso powder. Add a Coffee Ice cube (wth is that) 3. In a large bowl crack FOUR eggs (WHY JUST WHY?) . Add sugar and vanilla essence 4. Beat till fluffy. Sift in cocoa powder, MORE espresso, and salt. Fold in with a spatula. 5. combine butter mix and sugar mixture. Add melted chocolate. Sift in the flour 6. Chop up the chocolate and fold most of it into the brownie batter. Pour batter into the pan 7.Add in the rest of the chocolate over the pan. 8. Wrap the pan in tin foil, put it in the fridge, and let rest for THREE days *Three days later* 9. Take the pan out of the fridge and tear of plastic wrap. 10.Preheat oven to 180°C or 350°F 11. Bake in the oven for 25-30 minutes 12. Take out of the oven and quickly wrap in tin foil and shove in the freezer *30 minutes later* 13.Move it to the fridge and let rest for another additional 24 hours 14. Enjoy :) Ur welcome

  • I’m in literal tears at the end of this. I love this so much. I’ve been having a rough couple of weeks because of all the killings and violence here in Nigeria. I was dealing with Survivors guilt and the fact that I lost someone I knew to police brutality. I’d been having trouble sleeping as well as focusing on my work so I came to KZhead to find something, anything. Alvin Zhou, this video brought me peace. And for that, I’m saying thank you. The ambience, the fact that there were no words, your beautiful kitchen. It wasn’t too many things at once. I had to focus on the subtitles and the music helped me through it. What more? It was baking, my favorite thing in the world. I don’t know how, I can’t explain it, but my brain relaxed through all this. For the 10 minutes of peace you’ve given to me, in the middle of an absolute dumpster fire; I’m grateful. And I appreciate you more. Thank you.

I woke up this morning and said, “I’m going to make this!” My batch is in the fridge and will be out to bake in 72 hours. The batter itself is SOOOOOO good, so I’m excited to see how the flavors develop and what the final product tastes like. I made my own espresso powder with our favorite coffee (has hints of caramel and white chocolate). I am subscribed! I can’t wait to try other recipes (specifically that Lasagna) 🤤🤤🤤

  • I know this video is 2 years old but I just did Alvins 100h brownies and wanna give my opinion: What really is baffling me here is how Emmy (emmymade) and other reviewers say "if you need a quick brownie fix... this is not for you!" duh... yeah I guess that's obvious. But on the other hand... if I need a quick brownie... I'll probably buy one. Normally I need to look up a recipe, buy the ingredients, etc. So it doesn't really matter. If I plan on baking those things myself, I'll bring the time either way. For the verdict: Are those the best brownies yes or no? Depends on your personal taste. I've found them to be very dense and rich in texture. Those are no fluffy or crunchy or wet brownies. They are moist, thick, heavy, dense, rich brownies. There is a lot of chocolate taste which is beautiful. You do no taste the coffee at all. (I didn't...). If you are more into milk chocolate, maybe it's a bit too much for you. It did pair beautifully with vanilla ice cream. If you eat them cold, you'll probably be disappointed. Reheating them before eating them is the key for them to bring out their full potential. Sadly Alvin (nor Emmy) doesn't give us a hint as to how he is doing it. I've put them into the oven at 150°C and at 200°C for about 5 and for 10 minutes... I don't know the perfect setting to be honest... but having them in at 150°C for 10 minutes worked well. All in all: Those are some great brownies. No revelation if you ask me, but maybe there's just that much you can do to food right? I might try to give it my personal twist, but the recipe is solid as it is. Is it too much work? Not at all... it just takes time because it has to rest so long in the fridge. Other than that it's pretty much your regular baking recipe. Haven't tried to bake some without letting it rest though so maybe I'll do that the next time. From what Alvin and also Emmy (@emmymade) write, it doesn't taste as good as the long version so I guess that'll be true.

    • @@minajones8341 don't rely on the coffee flavor being undetectable. If you really don't like it, you might still be able to taste it. I joke sometimes with my family about this because it's almost like a superpower being able to identity coffee in things. In fact, I thought that some chocolate tasting like coffee was a false positive but I just learned now that some people put coffee in chocolate so I might actually have been right. If you really don't like coffee don't trust that you won't notice the taste. Our brains are really good at picking out what's bad for you (I can also taste how close to spoiling milk is ever since I got food poisoning).

  • I made these a few days ago and I have some observations to make: if you use irish butter, use less because of it's higher fat content. maybe 20 or 30 gr less can go a long way.If you don't want to eat so many calories, use half the amount of sugar and take away 2 egg whites. If you like dark chocolate, keep those ratios as they are, but if you don't, susbtitute some of the molten chocolate inside the batter with milk chocolate, or something i have yet to try, substitute the dark chocolate on top of the batter whith milk or even white chocolate. Thank you very much, Alvin, for releasing this recipe, the browneys were amazing.

  • I have no idea who you are but this video showed up in my reccomendations. At one point a few years ago, I baked brownies all the time, usually for my friend. However, since then, I've not been baking. I don't know what it is about this video, maybe the lighting or the music, but it made me really emotional, kind of like that end scene in ratatouille when the critic tries the food.   • my mom passed away 2 months ago and this video, is the first thing since then that made me feel like life is beautiful. im not ashamed to admit im legitimately bawling watching this. something about the way he treats his ingredients, the quiet sounds, the cinemetography, the music, the slight humor and sincerity of the text; it just really makes me appreciate life and all of its treasures. p.s. i used to love binge watching his giant food series but glad to see him making this kind of content.
