This Basque Cheesecake is supposed to have a roasted and char flavour, that is why it is a bit burned on top to indulge in a creamy layer of cheese in the bottom.

@Roberta it's not just the coloring, they're *very* firm. I've never baked or seen such easily handled cheesecake, especially if they haven't cooled for a long time. When they first come out of the oven the middle is supposed to still be a little wobbly, these most definitely weren't. 🤷🏻♀️ They'll probably taste good, but be a bit dry.

@@lennybuttz2162 That particular cheese cake always looks like that, if they don’t you’re not making it right. It sometimes has “burnt or burned” in the recipe title for that very reason.

The "traditional basque cheese cake" shoud be more creamy inside, it has less sugar, and it's basically made by cheese, eggs and milk cream, nothing inside like biscuits, neither lemon juice.

Kiri cheese: french, Oreo biscuits: american, Lotus biscuits: belgian. spanish basque cheesecake made a Korean. Dunno about the chocolate and the milk but the result is very international actually.

Basque people are from Spain and France. They were there (and their cooking) long before the border, and still share cities and provinces and traditions. That cheese just happens to come from the French side. Oreo and Lotus are definitely a modern twist. The chef deserves a lot of credit for their culture.

@Lenny Buttz its not actually burnt anyway per se. It's likened to a roasted caramelized sugar, I can see it looks unappealing to some though as char look doesn't really make us think of something appetizing

I would like to see some subtitles in these to understand why they are doing certain things, like putting the lemon zest/juice in each one. I thought they were going to do chocolate, plain, lemon and cookie and I was wrong! Also why were they heating the cream cheese before putting it on the mixer if they were going to heat it with a blow torch too.
I think lemon Is added because it is acidic and will react with the proteins in the milk to produce the right texture and taste. Which is why they add it to all of them as well as it helps the cheesecake hold it’s form. As far as heating it up probably just to make it easier to work with and more easily mixable instead of being like a frosting or icing
