  • Love to see all the vegetarian recipes you have posted lately! :) My personal favorite is the lunch waffles I make the recipe is (x1) Yellow Squash (x1) Zucchini (x3) Eggs (x2) Small Russet Potatoes (3rd a cup) Almond Flower (two handfuls) Shredded cheese (a spoonful) chili powder (a spoonful) buttery steakhouse seasoning (a teaspoon) minced garlic . I make this in a huge bowl and put 1/3 cup of the mixture into my dash mini waffle maker it usually takes about 4 minutes per waffle and makes anywhere from 12-16 waffles depending on the size of the veggies.

  • Hey Gordon. Just a heads up, Parmesan is sadly not vegetarian. Due to legal regulation of the name Parmesan, it has to be made using rennet extracted from calf stomach. Thankfully, there is also "Parmesan" made with microbially sourced rennet (which is the exact same molecule), however, under EU law, it was forbidden to call it Parmesan.

    • @NeTTeB Because parmesan is just so good, people went ahead and made it using microbially sourced rennet. Due to legal reasons they had to give it a different name, but the taste is mostly the same.

    • Id like to add a little footnote to the great people who are looking to reduce their meat intake and don’t get hung up on the label “vegetarian”. Calf Rennet is extracted from dried and milled stomach, a waste product of the meat industry. It also only requires minuscule amounts to curd cheese; about 1g for over 10 Liters of milk. So please don’t feel bad in eating real parmesan, the environmental impact should be minuscule compared to a pice of meat, or even the milk itself. If some tasty parmesan makes you choose the plant based dish over a meat based meal, totally go for it! Id much rather see you succeed at doing the right thing and eat less meat, than see you fail at trying to be perfect.

    • @@VenerableBede2510 very difficult to get the other varieties you add here where I live, by the ocean in the tropics in Queensland, Australia but yes, I totally agree with your comment. I love trying a variety of everything 😊. There are foods that I can't eat. I can't eat spicy foods and foods like eggplant. I found out the hard way that broad beans are poisonous to me after a very quick ambulance trip to hospital. I contracted toxic mould syndrome and it caused a lot of toxin damage to my stomach and I needed to have much of my stomach removed. I can't eat a lot of foods that I used to as my body can't metabolise it, and I do mean healthy food. I'm not a junk food fan. Have a great day (or night) wherever you are. My day has started here.

  • Even if you eat only vegetarian, proteins are necessary. Cauliflower, brocoli, brussels sprouts, watercress, etc. contain protein. Especially as substitutes if you have digestive issues with pulses.

  • Thank you Gordon and Tilly for cooking that delicious vegetarian meal. I can't eat any dairy so I had to give up cheese, the most enjoyable dairy. I have many vegan meals, vegetarian meals, fish-pescetarian meals mostly, skinless chicken breast air-fried, proletarian diet, and rarely 93% lean ground turkey. So, my diet is semi-vegetarianism. I will be looking for your videos on these diets. Thank you for that risotto, you really have to learn and practice how to do it right, i.e., the Gordon Ramsey Risotto Method.     • Aquafaba (the liquid from canned chickpeas) whips up like egg whites. Would absolutely work in that mousse. Vegan ricotta exists but you can just make it yourself. There are a bajillion vegan ricotta recipes out there.
