Very nice, concise summary of the video. Nice!
George is old school. Like "little red school house in a small town in New England that's been there for 400 years" old school.
I just wonder why he didn't grind various beef cuts (like short rib, brisket and maybe bone marrow) for an even better tasting perfect burger.

Potato bread is one of the most underrated foods in the world. It’s so good even not toasted with some butter on it. Makes a great late night munchies snack
It is unobtainable where I live. As is the famous 'Hawaiian' buns you hear about, They just don't exist here. We do get really good buns that are called kaisers but which are not especially crispy crusted and not chewy at all. Their only drawback is they are 6" across, so your burger cannot be two patties lest you actually die trying to eat it. They toast beautifully, and can be found with poppy seeds, but not usually sesame seeds. they bear very little resemblance to actual kaiser rolls, which also exist here, but they sure are delicious. Biggest problem with them is they are like baguette in that they are stale in 12 hours.
I'm going to have to try it for my next burger. I'm not ashamed to say every time I go past potato bread at the supermarket I simply ignore it 😬 Never tried it, and it looks like I should! 😯

My old man made burgers for a fishing trip when I was super young it was mustard, pickles, and onion. The burger was cold and been sitting around in an ice chest for hours. I don't care for mustard and onions typically, but to this day, 44 years on earth, that burger is in the top 3.
I have a similar memory of fishing with my dad and it was a baloney and egg sandwich on white bread with mayo. The nostalgia is crazy!

George is a national treasure. There should be a burger holiday.
Homie got an ad every 3 minutes 💀 he's killing it.
For everyones information: Cheddar does not melt, it sweats. The oil it secretes is the flavor of the cheese, but that's okay on a burger you just have to know what you're doing. By merely allowing the cheddar to sit briefly on the cook surface atop the patty the cheese will soften, you'll see the edges dip, and that's perfect. The oil will have sweated but it won't escape the burger Josh fucked up the cheddar by melting it, a LOT of the flavor is going to end up running out of the cheese and across the cook surface if you melt it under a bowel (aka the flavor). This is why when we make mac and cheese we melt the cheddar into a medium (usually creme) to capture that oil and all that flavor that the cheddar has.
The collab we never knew we needed
So first off, if you are a burger person and not just that chicken nugget at Chilis kid who only eats one thing, you know there are different perfect burgers. Some burgers are AMAZING with cheddar cheese. Jack n the box puts different "color" cheeses on their burgers and they're pretty great. Different burgers for different situations.
Personally, the situation also changes completely when you use a different meat, like Bison. So definitely agree.
Fully agree. Sometimes you want the greasy almost no toppings smash burger, sometimes a thick medium cooked patty with all the toppings and sauce. Sometimes raw onions, sometimes caramelized. In the end a burger is a sandwich and more of a concept than a specific dish.
Josh hates White Castle. That alone disqualifies him as a burger expert.
My Mom used snowflake rolls from a small bakery around the corner for homeade burgers way back when. I think the sprinkling of flour on the buns before baking transforms them. IMO the best burger buns of all.
Have you considered doing more shared critique vids? It is a fun format that leads to surprises for both parties. I always remember the Chef Netflix series where Favreau and Roy Choi make kimchi (I think) and Roy likes Jon's better, but Jon says, "Chef, this is YOUR old recipe." Either way great vid!
My favorite is also variation of the Oklahoma smashburger. Bottom bun, spread of caramelized onions, bottom smash patty, cheddar cheese, top smash patty, american cheese, pile of stringy grilled onions, yellow mustard, top bun. Making proper caramelized onions is time consuming, so I make them in relatively large batches and freeze them in ice cube trays. I add a little beef broth so they come out of the trays easier when frozen.
this sounds so good omg
Quick search revealed this is legit and caramelized onions do freeze well, what a game changer 🤯 I'm going to be so happy after I stock up!! Thanks for the tip
I love what he said about sauces. Don't need them.
I like a little ketchup, even though I hate mayo I can live with a “burger sauce.” Most restaurants just drown it in sauce though, I just need the bun to be a little moist so it goes down easier.
A chef once said that sauces are like lingerie on a stunningly beautiful woman: unnecessary, yet delightful. It was me. I was the chef.
I appreciate how you tried to school the literal Burger Scholar on burgers. Great stuff.
In Germany, you can find really nice Laugen buns in supermarkets, and they are my go-to for smash burgers.

The crossover we’ve all been waiting for
This was very interesting to see Josh, George looks a very cool guy! Big hug for both, loved the video !
The videos have gotten a lot better in the past couple of months, I am becoming a big fan again.
Colby Jack- smooth easy melt with more flavor than American but easier than Cheddar to melt without greasiness. Should be in the final group.
You bought him to make the perfect burger and you didn't even ask him before deciding on the best burger ingredients
He agreed to each ingredient like did you watch the video
For any melted cheese application for sandwiches or burgers, american cheese is a great tool to use. I like combining it with a cheese that has a bit more taste like cheddar. The emuslifier in the american really helps the cheddar not get greasy, and the cheddar really helps the flavor overall.

You can't go wrong trusting a man with Wolverine level sideburns. Also, it's hard to believe that the word "bacon" was never uttered once in this video.
You bring up a really excellent point here. I live in NYC and I’ve been to Hamburger America a few times - - it really is pretty spectacular. It’s like having a burger that’s just what a burger IS. And what I realized is that bacon is a crutch. Bacon is just great on its own, and covers up a lot of mistakes in cooking. That’s why the fast food chains are all so bacon crazy, it’s covering up the fact that their burgers themselves are pretty terrible.
If the perfect burger needs bacon, it has failed.
Just got myself some Ramen, looked on youtube and found that this was just uploaded. Could not be more perfect.
George is the burger god. You had no chance of beating his best burger.
I loved this piece. Food for thought.
George Motz is a got damn national treasure. The man is almost single handedly bringing us all back to the good days of simple burgers.😊
I've been refining my own "perfect burger" recipe over the last 3 years. It includes a milkbread brioche bun, 80/20 beef mixed with my homemade black garlic compound browned butter to slightly up the fat content and flavor (side note, I make my own butter from home, it's far superior to any store-bought stuff), spiced pickled red onions, smoked gouda, and my own special sauce made from black garlic, worcester, dijon, MSG, and a handful of other things. I've fed this burger to several people before, a few of them have even said it was better than the best premium A5 Wagyu burgers they had in Japan, which I took as the highest compliment!
yes, smoked gouda with pickled onions is the way to go for sure, this sounds amazing
Nobody puts A5 in a burger so this comment is complete nonsense
@@TheBeastBony Burger Revolution in Tokyo amd Olu Burger in Kyoto, look it up before pretending to know everything.
That is a great compliment! Your sauce sounds nice! Is it difficult to make your own butter?
@@karinewilson1752 Thank you! Making butter is simpler than you'd expect, but I love to over-complicate things to make them the best. Basically put heavy cream in a stand mixer and beat it like you're making whipped cream, but beat it for like 20 minutes. It separates into a glob of butter and buttermilk, about equal parts each. Collect the butter together and rinse it under cold water to remove all the buttermilk from it (since that's what ultimately causes it to spoil). That's the basics, but if you want to improve the flavor, put the butter in a Dutch oven at low-med heat for about 20 minutes to boil off all the moisture, concentrating it down. After that, turn the heat up to medium and stir constantly, eventually the milk solids separate and start to toast and caramelize. From there you take it off the heat, and you can either leave in the milk solids for more flavor, or filter them out to have what is essentially super flavorful ghee. I prefer ghee since it is the best for high-heat cooking, it's smoke point is like 100F higher than most oils!
THIS IS THE BEST COLLAB EVER
Been using your burger sauce for awhile now and won't make a burger without it now. So good! And if you're gonna be in the kitchen making it (caramelizing onions takes a bit), then there's no excuse to not make the homemade buns too. Looking forward to burger season!
Knowing Josh and George and also being a bit of a burger aficionado myself, I called every part of this. The perfect burger is simple, pure and delightful. Overcomplicating and being extra doesn’t make a burger better.
It's been my go to burger for years. Though I tend to go for sliced onions vs the diced onions but otherwise this is it. I grew up having ketchup on the burger but learned to go with mustard only when I started making my own.
Thank you. I actually learned a lot today.

This is what I have been waiting for, the Collab of the century !!!
Weird to see Motz's perfect burger at the end. My favourite fast food burger at the moment is from a place called Freddy's (not a massive player in the market, I don't believe...). Their basic double which is what I get is simply: two smash burger patties, american cheese, pickles, onion, mustard...and a normal (potato?) bun. They serve it with a drink and excellent thin fries for $9...which is a reasonable price for what you get. They have sauce on the side called fry sauce (the jalapeno version is excellent). It's amazing that the simplicity won me over. It's just a good burger without being fancy/crazy/etc. I know they sell other burgers, but their basic double is just excellent every time I've been.
I’m not a fan of smash burgers, but to each their own. I like a nice thick patty that’s a little red in the middle.
Of the drive-thru chains Freddy's Frozen Custard & Steakburgers is my favorite too but for about the same price I can go to Texas Roadhouse and get their lunch special (mine opens at 3pm M-F but 11am weekends). More meat and thick fat steakfries (skinny or fat I don't think there is such a thing as a bad french fry). I can sit down at a nicer table and get served instead of standing in a line of parents with screaming kids or in my car breathing the exhaust fumes of the car in front of me. Relaxing if I'm there when they open, before they get crowded.

Didn't he try the burger, not like it only to offer Josh his own? Josh then acknowledged the simple approach was better and didn't overcomplicate the flavor. I feel like you didn't retain anything that happened if you're saying that.
Did you even watch the video? He agreed with him at the end. Also you seem to have no concept of individual preferences and tastebuds. George and Josh are no more right than each other? They are saying what THEY like best.

This is the Weissmann content I love!
George basically just took a good old fashioned cheeseburger, and maximized the necessary flavor profiles, all while keeping things as simplistic as possible. Is probably what Mr beast has said about thumbnails, that thumbnails like this one generate more clicks and etc but same
What happened to the thumbnails?
Let’s critique Josh methodology lol: 1- You can’t test blend with smash burgers, then test thickness with that size. Maybe thick steaks are better with 65%, who knows. 2-American cheese meltiness is only because the emulsion of cheddar, water and sodium citrate. You can make any cheese just as melty as American cheese using sodium citrate, not just cheddar. You can also chose something else than water as the liquid, like beer. So you should choose cheese based on flavor, then adjust meltiness with more /less water in the sodium citrate emulsion. 3- cook method. You tested grilled, and flat top. You should try more funky methods. My favourite is smoking burgers to 130-ish with a bunch of beef fat in the smoking fire, then sear on a flattop. 4-Buns (yes, I know it’s the beginning of the video). As with cheese, you can adjust crust stiffness and bread softness by adjusting the fat content of the dough and some other factors like pectin. 5-sauce: Sauce should be added only to add what is missing from the other ingredients. By customizing your cheese and buns, you should get mostly there, but if you want a maple syrup dauve to take your burger elsewhere go for it. Sauce should not be necessary, but like, a way to take the burger in another direction.
oh man, getting that level of a praise from George for the sauce must be a top 10 moment

The second I saw him add 3 pickles cut length wise and saucing both buns, I knew there was going to be criticism. Quite frankly I agree. Sometimes in a burger, you don't want pickle in every bite. Almost kind of want to find it as you're eating it. And saucing both buns can be over powering if the sauce already has lots of flavour.
