Knife Making: Nakiri Japanese Knife DIY

Another Japanese Chef's knife! This shape is inspired by Nakiri knives typical Japanese-style vegetable knife but with a western full tang construction and a general utility bevel geometry.
The steel is 02 high carbon. Handle is made of ebony and teak (or oak, not sure) both aged well by a luthier and white vulcanized fiber liners.
The pins are all brass with the middle one in mosaic made by me in a previous ideo.
Clarification:
With the words "inspired by Nakiri knives" I wanted to point out that this knife is not an actual nakiri. The handle construction, bevel geometry and thickness have pretty much nothing to do with traditional japanese knives. This knife has been made to be used as a general purpose knife, that's why is thicker than you might expect!

  • I used a large rasp/file for mine a while back. My look comes from leaving a little of the rasp and file showing after grinding/sanding. Like the sanding block for the angle, so simple.

    • I was the same with wood dust. I spent years making shit out of wood without the proper dust extraction system and no mask. I started to get red welts on my skin and I would hay fever symptoms when I would do woodwork. By this time I had tens of thousands of dollars of woodwork machinery and hand tools, all were useless to me as I couldn't use them without getting sick. Now I spend my time welding and grinding instead. I do miss the woodwork though. I still have to cut wood every now and then for various reasons, but I have to do it outside with a good respirator on.

    • Same here only I was born being allergic to the whole world which means my body rejects fruits and vegetables. I have asthma so the allergic reaction swells up my gums causing them to itch really bad and the irritation makes my throat feel raspy and itchy and then everything gets red and inflamed as well as my throat swelling. Doesn’t matter if they’re cooked or not. My stomach issues leave me to eat a very specific diet which mainly needs to consist of fruits and vegetables, yay for me! Due to what I’m supposed to be eating and mixing that with my allergies to everything, they contradict so I’m stuck hating food every time I eat. Most days I don’t even want to eat. My diet is mainly fruits and vegetables supplements thankfully this way of consuming them is okay as well as chicken and red meat. Smelling perfumes and cologne will trigger my allergies to go off really bad so I completely avoid candle shops and anything similar. Bathroom sprays are no different. Having a house too clean will trigger my allergies but having it dirty doesn’t help either, everyday is a contradiction for my body. Forget lawn work and gardening that kills me and usually gets me really sick. I hate spring. I’m sure there’s other things I haven’t came in to contact with that my body is probably hoping I never come into contact with. Sometimes if my skin rubs on any plant my skin breaks out in bumps and starts itching and spreading. Obviously there are some plants nobody should touch and just being around those plants makes me break out as their smell or plant fuckery dust is in the air so I still get a reaction. I feel your friends pain. I’m sure there are things he/she is worse on as their body is different. It is what it is lol.

    • I imagine it’s because he showed how to fake a forged knife. I’m this case, there’s nothing wrong with his process because he’s not trying to hide the technique. However, some stock removal knife makers will attempt to deceive buyers by placing faux hammer marks into knife. It’s a deceptive tactic when used to hide a lack of skill.

    • this isnt really forged, it is texturized, forging would imly significantly altering the shape and crystal structure of the steel, there is a reason forging is still used in engineering, when you really forge something you align any lattice fault in a way that intersects the surface as little as possible, going parralel to it instead of across it, any place a lattice fault intersects the surface is a weak point, if it is paralel it will lead to flaking, if it is perpendicular it leads to cracking or even a snapped blade in bad enough conditions.

  • Blades sharped on both sides like this have a _ryoba_ type edge. For left or right hand. However, the rest of the blade is (too) thick, and has no curve or notches to release the vacuum created when slicing. A chefs knife must have this so it can have a “rocking” motion for some cutting operations. The absence of the notches causes food to cling to the blade with additional passes too. Nice job here, I’m being critical. I’d love to cook with a knife like this. But I doo have those few small qualms with this project. Just think of it as advice for the future? Friendly advice hopefully. There’s a reason “santoku” means “3 virtues” ;)

  • Nice knife, great job. I see that you have 6 millions + people that watch this video, but I'm appalled by the bunch of "experts" criticizing, your work and some sometimes disrespecting. I tried to find a single video from these experts, but shockingly I couldn't find any - nothing to show just hiding behind the their computer and talk crap. Keep doing these videos and as me there are many more that appreciate your time. Thanks!
